Those salamanders are meant for display and as pets. Not for food, its illegal to eat them in China

I think those are farm-raised salamanders. those animals are endangered in the wild, but there is nothing illegal about eating a domestic one. He checks Wikipedia about those softshell turtles that listed as VU and decides not to eat them when you can find those turtles in many US supermarkets.

Salamanders are endangered but only farmed ones are legal to be sold/eaten in China. If you get caught with wild endangered species in China you are seriously fucked. Plus for farms like salamander farms and soft shell turtle farms, they are actually required by law to release a number of their animals to wild annually and are proven to help with the population of endangered animals in China.

I remember a story my parents told me when I was a kid. When they went to adopt me they went with a few other families who were also adopting children from China, and they happened across a street vendor. A family happened to get stopped and was asked, "would you like to try snack." They said sure, and ate a piece. Said it was super good and asked the vendor, "What is this." They said, it was [snake]." They had misunderstood the vendor and thought they were eating a snack, not snake. Always made me giggle a little.

Giant salamander is so endangered and it is also highly sought after at the same time that it is farmed in China. However, you did good by not eating it as I don't think there is any proof that the salamander that you see are the farmed one. It is called Baby/Infant fish (wa wa yu in Mandarin) cause it sound like a crying baby.

As an expert on reptiles, it saddens me that people don't realize that snakes are just regular animals. They're not very intelligent, they can't curse you, I play with them on a weekly basis. all they do is just search around for food and warmth. They're not evil, and they can feel fear, pain and hunger just like any other animal. They're actually very sweet and gentle once you handle one for a minute or two. I've let wild watersnakes hang around my neck like a scarf, and they're one of the most aggressive on my continent. They only become aggressive when they think you're gonna hurt them. Once you show them that you're not a threat, they just cuddle against you for warmth. I've been doing this for fifteen years, and have barehand handled hundreds of venomous snakes and spiders. Including recluses and vipers. And all were wild specimens.

That snake looks like it wasn't actually shedding, it looks like a previous shed was stuck to it. That usually means that the animal was not being taken care of properly.
