🇻🇳GEODUCK SASHIMI: Blanch the geoduck in a bowl of hot water. Carefully take out the skin around the neck and use a knife to remove the shell. Get rid of the internal organs. Cut it into crispy thin slices, and place on ice. Serve with wasabi and soy sauce.
🇻🇳GEODUCK WITH X.O SAUCE: Cut the geoduck’s neck into thick chunks. Flour coat it and flash fry it in high heat. Blanch the mushroom and celery and then stir fry with bell pepper. Season with X.O sauce, salt, sugar and MSG. Add the geoduck then wok fry.
🇻🇳DOUBLE-BOILED SOUP WITH SLICED GEODUCK: Make the broth with pork, chicken, Jinhua ham, dried scallops, pepper and dried mandarine peel. Steam for 8 hours. Use a colander to remove all ingredients. Place geoduck thin slices over bean sprouts, fried rice sheet/cracker, julienne ginger and scallion. Boil the broth, and pour over all ingredients in a serving bowl.

My tiniest complaint is I wish Sunny would be more aware of the animals before eating them. I know it's a lobster but watching him pick it up by its antenna just OOF that hurt me, the thought of picking up an animal by its smallest weakest part like a tail or antenna just hits me the wrong way.

I used to live in Campbell River, British Columbia. On one of the beaches you can actually go and dig for geoducks. My ex-wife and I tried a few times to no avail, so we would looked on at the Vietnamese people who seem to have had no problem digging these elusive little bastards from the wet sand with amazement and wonder. Then we we take our dogs and run across the beach, activating the geoduck geysers, which would freak out the dogs and making them dig (but they would give up after less than a minute). And now we are divorced. The moral is, geoducks will wreck relationships.

Don't forget the older people in your life and if you are young please consider spending your time, money, and effort with these neglected and vulnerable members of society. They are EXACTLY LIKE YOU, and their inner lives and thoughts and feelings are just as consuming and hard to navigate as yours; and they spend just as much time as you trying to be the best person they were taught and trained to be. It's funny that you mention the way that savory meats mix well with sweet flavors. I started using a honey glaze on my bratwursts (both homemade and sure bought when I need to) and most of my family was really apprehensive about it. But when they tried it, they refuse to eat brats without it now. It works especially well with jalapeno cheese brats and served with biscuits. People need to stop being afraid to try new things or to make something they don't think they will like.
