Place banh xeo skin in a saucepan and add shrimp. Cook it for 2 more minutes and then serve with rice paper, fresh herbs and sauces.

This episode changed me from an occasional lurker into a full-time subscriber. I knew how Nuoc Mam was made, but had never seen it done. My first experience with Nuoc Mam was buying not just one bottle, but a second since I thought from the aroma that the first one had certainly gone 'round the bend *blushes*. I was such a noob to the life-changing experience that is Vietnamese cuisine. But when I learned just what Nuoc Mam could really do, I've always kept a bottle (or two) on hand, and I must confess to occasionally taking a little nip straight from the bottle. It is truly the elixir of the Gods. Thank you for such a yummy excursion. Maybe one day I'll get to experience it firsthand.

Sounds like my first experience actually buying fish sauce. It smelled like death. But it works so well to add flavor I just accepted the smell was something you just have to put up with. I did find out later that real Vietnamese fish sauce, as well as other fish sauces in Asia, don't usually stink as bad and sometimes smell closer to a pungent soy sauce smell. Commercial "Asian" fish sauce, particularly that sold in the West, uses a different method to make it which leads to such a terrible smell. The authentic stuff also tastes much better.

It only spits fire and water at 9:00 p.m on Saturdays and Sundays (or on special occasions). It spits fire first then spits water. The event lasts for 15 minutes. People standing under its head can get wet when it spits water.)

As a swede I got really surprised to see that Vietnam makes their fish sauce by fermenting herring. Which is exactly what we do, but instead of making fish sauce we do that smelly thing people gag from on challenges on youtube (surströmming), which is in fact really tasty when eaten correctly. I also got surprised to see that they pickle the herring (with lemon) - which we do too (but with vinegar), which is considered a staple dish (inlagd sill) on everyone's table on major holidays here in Sweden (especially christmas and midsummer). Interesting af to see how food cultures crosses borders like this!

I visited Vietnam for the first time right before the breakout of this beer-virus. I only visited Hanoi, Da Nang and Saigon, but Da Nang was by far my favorite of the three. Such a relaxed and laid back city (especially compared to the other two). Definitely want to go back there someday after the world opens up again.
