Awe! Me too one day! It's funny I've come close but I haven't found a publisher that really "gets" the concepts I would want to do in a book. (Pictures for every recipe, Foolproof Recipes for Holiday Classics. Menu Ideas of what goes together, Game Plans to manage the prep, styling ideas for how to make it look great! Beautiful photography, shot in my own home, not in studio etc). And when I mention all this to publishers who have reached out to me, they just kind of look at me like "Blink, Blink" LOL! So I figure, OK I'll just stay here on YT because that's where I can accomplish all that! LOl! #WhyILoveKZbin

I'm not big on Apple Pie. Part of the reason is that the apples are always cut in bigger pieces. The thinner slices you cut are great! Looks delicious!❤

Beth, this is the pie of my dreams. I grew up (in Italy in the 80’s) seeing this in Donald Duck’s comics and wondering what it was, because it was nothing like any Italian cake or tart. Same for my partner, he dreamt of trying it and his mother could never find a recipe at the time. I made this twice already for him and it’s the best gift I could give him; he is in heaven! The corn starch on the bottom crust is a great idea! This recipe is basically my beloved Grandmother Irene's apple pie she was famous for, I make it all the time I love it. I brush my top crust with half and half.. before baking.

Hi Beth, thanks for sharing🎉 My tip for you is to place the cookie sheet in the oven for a few minutes to get it hot and then place the pie on it to bake it. This way the bottom crust gets nice an brown and cooked more even because it takes a while for the bottom of the pie to get cooked and usually the top crust and the apples are done in 60 minutes, but not the bottom crust. And this is when we get a soggy bottom crust. Best wishes, 😊

My tip is to place the sliced apples (sans spices and thickener) in the microwave for a few minutes to soften them slightly. My family likes their apple pies very tender and if I don't pre-soften them a little, the apples can occasionally be on the crunchy side, even after baking for a long time.

Our Polish version of apple pie always have mushy, juicy apples, but this is because we don’t use pieces of apples, but homemade apple mousse instead! 😊 It is put on dough, then we add a layer of egg whites mousse, and then we grate (yes, grate!) the top layer of dough to make it look like a little sheep! But I really have to try your American version - it looks super delicious and very elegant! 😊

Thank you Beth! The ingredients and Protocol (I'm a lab scientist -- we call our experimental procedures "protocols") are simple and easy to follow. At the age of 57, I have decided to learn how to bake. Your tips -- keep everything chilled, the use of cornstarch, etc. are indispensable). Here's where I kinda screwed up: 1) I was impatient and didn't cut some of the apples thin enough, and the sizes weren't uniform; 2) I overfilled the pie with the apple mixture; 3) I had used my one kitchen brush to rub olive oil on a raw chicken, so I used a spoon to brush the egg whites onto the crust, leaving sort of a scrambled egg effect. Didn't want to have a salmonella topping on my pie:) Nevertheless, this experiment was a success! Delicious. But need to improve my crimping skills; the edges looked like a kindergartener ( or an adult who had too much eggnog...shhh...) did the edges.

Ha! Well I'd say your first effort sounds great! Did your family enjoy it? Was the process fun and gratifying? If so that's really all that matters :) I also find, as I'm sure your scientific background has taught you, we learn the most from cooking and baking through our mistakes! Ha! I bet you'll cut those apples thinner next time, invest in a pastry brush only used for baking :) Once you do these things over and over it all becomes second nature :) Keep up the good work and keep me posted on your progress! :)

Beth thank you so much for this recipe. I was always scared of making pies in general and I was so surprised when everything looked just like yours! Last month I lost my cat, she was my baby, and I baked this so often because it’s my husband’s favorite, it felt nice to make something new and comforting. Ps: I misread the cornstarch you’re supposed to put at the bottom, I put 2 tbsp, but it works really well because I wasn’t using green apples (I was using Fuji apples). So it helps if your apples are a bit on the red side.

Beth, a couple questions for you. I want to make the dough tonight to leave it in the fridge over night and start on it tomorrow super early, but I see that you have to leave it 24 hours before serving. I’m in a pickle there. Second question, I see that you put it in a iron skillet. Do you think it will be fine in a ceramic dish? Would it be the same amount of time in the oven? Hope you get to answer

Oh sure it will still be great in ceramic and yes make the dough and then bake tomorrow am and then it will still be great but maybe just not as “set” :) so your slices may not be as clean as mine but it will still taste great!

Ha! I watched it before uploading and thought, is this overkill? Are people going to be like "just give us the recipe woman LOL!" But that's what a printed recipe is for. Ha! I find with video you can really dig into the specifics and cover the dos and don'ts. You guys know me by now I just can't help myself! I've had so many pie disasters over the years and always learn the most about cooking from my mistakes (Don't EVER use a honey crisp apple for apple pie! You'll end up with Apple Soup! Ha!) So I just want to share all those tips with you all so you don't have to suffer the same fate and can just be rock stars "out of the gate!" xx Enjoy!!

I'm so glad it's been a hit! I'm not really sure about the freezing, since I haven't ever tried it. But if I was to make a suggestion I would say, don't thaw it, just pop it right in the preheated oven, since if you thaw it the apples will release too much moisture and make the dough all soggy. Just make sure the pie plate can withstand the temperature change, it should be both freezer/oven safe.

Oh sure I usually bake them on the lower third rack of my oven. Center rack I found can have a tendency of burning. Hope you enjoy! :)

Beth I’m making this pie tomorrow for Thanksgiving. I bought the cast iron pie pan that you used in your video and will be using it for the first time when I make the pie. Do I need to butter the dish for the first use or even after? Can’t wait to make this for my family!

Great question! No need to butter it it’s already pre-seasoned but when you clean it out after thanksgiving make sure to dry it well and then wipe it down with a little vegetable oil before putting it away that will prevent it from rusting :) I’m making mine tomorrow too! Great question! I store it on the counter if it's just a day before. With a sheet of foil on top just resting, after the pie is completely cooled. Beth! I love your channel and your recipes!! This one is an amazing recipe. I am planning to bake it for Thanksgiving, unfortunately among my family I have some relatives who are allergic to gluten. Do you have a recipe for the pie crust that is gluten free? Would it be OK to use the same filling recipe? Please help!

Oh sure, you could actually turn this recipe into an Apple Pie with a crumble topping :) So use the filling from this recipe and then top with the crumb topping recipe below. I would trust a gluten free baking flour for a crumb topping, but they get really tricky for pie dough. This is my favorite brand. amzn.to/2CVXFlG . Hope you enjoy!! For the crumb topping1 cup of Gluten Free flour2 tbsp of white sugar2 tbsp of brown sugar1 tsp baking powderpinch of salt 1 stick of melted butter2 tbsp of heavy cream1 cup chopped walnuts1 tbsp butter (unmelted) In a small mixing bowl combine flour, sugars, baking powder, salt. And mix well. Add melted butter and cream, stir with a fork until crumbly. Add walnuts. Top casserole with the crumble in a single layer, covering most of the apples, but allowing some apples to peek through. Cut tbsp of butter into 4 small pieces, dot casserole with butter. Bake 40-50 mins just until the juices start to bubble and peek through. If top needs more browning increase temperature to 375 until browned. Serve warm with butter pecan ice cream. To reheat, place in a 300 degree oven for 10-15 minutes.

When you bake it the day before, do you put it in the refrigerator, or is it ok to leave on the counter? TY! :-)

Great question! OK here's what I recommend. Leave it to cool on your counter and just keep it just like that at room temperature. (uncovered) that way no condensation will build up and your pie will remain nice and flakey. Then when you go to reheat it at 300F, it only takes 15 mins to get to the perfect "warmed through" temperature for serving. But If it's going to be more than 24 hours, then I would place in the fridge :) Hope you enjoy!!

What size do u cut ur apple. Alot of recipes say 1/4..... but I keep getting mushy apple..and I'm using granny smith. U think a thicker apple would help? I'm on pie #4 in 2 days!

Oh yes I absolutely love it! Because I know what you mean, I have had those flimsy ones too, until I invested in this one! It's by OXO! I’m so happy I’ve found this channel 😀. This looks so perfect and doable for me. Question: I’ve been looking for a recipe for a Dutch Apple Slab Pie. Since I found this channel I won’t be happy with another recipe. This recipe looks like it could adapt pretty easy. I wanted to make a vegan version of this. Instead of adding butter I wanted to make the crust with coconut oil. What would you recommend? I’ve seen recipes call for a 1:1 substitution.

Beth! Thanks so much for this wonderful recipe, BUT, WHERE’S YOU PEACH PIE RECIPE? I’m in Florida, and even here fresh peaches aren’t available, so I will use frozen for Thanksgiving because everyone wants it, and I would LOVE your recipe for that! You are the best of every chef I’ve seen!

Hmm I haven't tried it with Cortland apples. But my guess would be Cortland's are too soft and once cooked down, they might get too mushy. Best bet are the Granny Smiths since they are a hard crisp apple and will hold their shape once they cook down :)

How would I bake that crust if I was using it for a pie that only needs a bottom crust that is pre-cooked?

Sure I would half the recipe or make the full recipe and freeze the other half. Then just use it as directed for your other recipe. It sounds like you need to "Blind Bake" the crust? Which you can do by fitting your dough into your tin, pricking it with a fork, the placing a sheet of parchment paper on top of the crust, and weighing it down with either uncooked rice, uncooked beans or baking beads until set or "blind baked" :) . Hope you enjoy (PS Do make sure you refrigerate the dough at least 3 hours before using, especially for blind baking so it doesn't shrink)

Thank you Beth for this gorgeous recipe! But whenever I try to bake apple pies, there's always a huge gap between the crust and the apples. Also, my filing always seems to turn to applesauce! Any suggestions on how to fix these two problems? Thank you so much! 🍏🍁🍃🍂

Oh yes! OK 1.) The gaps will be gone if you pack in those apples. You can kind of see me doing that before I place the butter. Really press them down tightly and not air pockets will remain. 2.) Apple sauce issues are probably due to using the wrong apples. Granny Smiths are the way to go! + the Cornstarch and you'll solve those two issues! :) . Keep me posted! :)

I just made the pie crust and mine did not look like yours it was sticky and moist could it possibly need more flour?

I've made 2 pies this weekend and the apple are mush. I only sautéed for 3 minutes. Could this be why. And I'm using a premade crust from grocery store in the foil pan. Im using granny smith. Im going crazy.
