the most seriously taken ramen maker seen. Good going!

I just watched this video, I happened to open a Japanese food shop, and started selling takoyaki and then ramen, about 1 year ago I only cut noodles manually by hand, as I learned and developed my knowledge increased, and now I use an automatic noodle machine like the one above. In use, this video reminds me of my long journey of learning to make ramen. thank you for making a good video. keep up the good work friend.

It is a long ride that’s for sure. Congrats on your shop

Thanks for showing my app, and great video, as always. As I mentioned yesterday on discord, your video motivated me to look for an alternative to ziplock bags, it's a huge waste and that's always a bother. I haven't had breakfast yet and your shot at 6:06 made me crave ramen so bad.

I was all set to buy the Kitchen Aid roller and I think your video may have saved me the money I can instead spend on a Techtongda. This is all really good stuff.

Happy to help! The kitchenaid for sure has way more uses outside of ramen…but if it’s only the noodles you seek…🧙♂️

Nice.. some good ideas. I’m still tossing up between a techtongda and a vintage Japanese cast iron manual machine.
@leopoldwhylie5076 Жыл бұрын
But where am I to find such a vintage machine?
@antonc81 Жыл бұрын
@@leopoldwhylie5076 yahoo auctions Japan via a freight forwarder… they have a narrower dough path and are less convenient overall.. but they do look nice :)

Is there a benefit to using the kitchenaid for mixing over the food processor? It seems like the food processor would work the same for both low and high hydration. I'm curious because I only have a food processor and will be working with higher hydration doughs.

Thanks so much for this video! After a lot of comparing I think I'll go ahead with the Techtongda instead of the Hengwei I was eyeing earlier. Where did you get the separate 1.5 mm cutter?

So I'm looking at buying this noodle machine but the one on Amazon only has a 3mm noodle cutter. Where did you get the smaller knife/cutter?

Had to go looking for it on DHgate

@@teikenramenchannel By any chance do you have a product number or ID for this cutter? I've had no luck finding it, and the other 1.5 mm cutters I have found don't fit the Techtongda...

I do not have a product number but if you message the shihailei152 shop and mention me by name I am sure they would help you out

Do you think we can use Nonna's italian pasta machine for these noodles?
@teikenramenchannel Жыл бұрын
Well, Mental Alchemy Subliminals, I think as long as you keep the dough over 35% hydration you will be fine

On the ramen noodle calculator there is a protein portion. Should I be adding protein via vital wheat gluten for those numbers?
@teikenramenchannel Жыл бұрын
VWG or various other types of flour will bring different protein content to a noodle. I think messing with the protein content deliberately is a little down in the weeds but it will help you understand why your noodle is the way it is (high protein is typically chewy and firm, lower protein is soft)
