Your pronunciation of Danube as da-noob is a first for me. 50+ years and I've never heard that version. Dan-yoob is more common.

My buddies and I did the Passau to Vienna last September ( 2021 ) and we're going again in 2023. Love the Danube! We rode to Linz the first day and next time we're going to ride half the distance the first day. it seemed like we felt we couldn't stop to really enjoy the ride because we felt the need to get there before it was too late in the day. Other than that, we had a blast. Can't wait to do it again!

How many days did this trip take? I'm thinking of taking a train from Budapest(where I live) to Passau in the spring and doing the same route then catching a train back to Budapest from Bratislava.

Don't remember but I recommend doing the math based on how much distance you like to bike in a day

What did you do with your bike while in hostel/hotel etc?

I made the habit of asking the hotel/hostel if they have room for/accept bicycled before checking in. The Danube receives a lot of cycle tourist so I imagine the vast majority of them would here.
