Dan. Get yourself a wheel lock for that cart. Two would be even better. I've had a utility trailer disappear in the night on me.... Got wheel locks on all my trailers now. There always still where I left them.

Personally I'd reverse the dogs and buns pans. Have the buns to the left and dogs to your right with the chili and cheese in between. That's pretty much how I got mine setup. You can also use those other pans for smoked sausages if you wanted to add to your menu. Or if you do catering you can use those two pans for like meatballs and philly cheese steak for subs.

@@HotDoggingwithDan Go to Sams and see if your Sams Club has the Sunset Farms Georgia Smoked Sausages. If they do buy a pack and try them out. People love them! I sell them for $5 each all day! I sold 10 today ;)

The flip-top pans look good. I saw some reviews on Ben's site that were pretty critical of them, but they look like they fit well and close flat in your video. You happy with them? I'd also like to see a video about how you weighted the cart for towing -- I caught a glimpse of the cinder blocks in the burner area and would appreciate some insight into how you balance the cart for towing. Thanks, man -- glad to see you bringing some hot dogging videos back!

I s9ld mine a few yrs ago i never shoukd a did that. But they requested hot water on carts n back then anazin woukdnt send them to ontario. Crazy now i can get everything. I got an rv class c. But i think i may start as a pop up tent tyoe deal with the rv first n then i got more cash to build out the rv

It was just to add some weight to the cart so it pulled better.

Hmmmm...about storing your tongs...perhaps installing a rail between your handels might do the trick! Or attach a ring to the left or right side of your cart so you can slip the tong in like a holster...think cowboy gun slinging! My imagination at 3am! Great cart btw, I'm close to getting mine from Ben as well but I'm debating on the flip cover!

Great ideas! I'll look into them. Ben has some great carts. Im partial to the flip top pans because its what my leased cart has, so its what I've always used. Its just what im used to. I know some people that prefer the removable lid pans for the same reason. Its just what they are comfortable with. I like not having to worry about moving pan lids out of the way every time I make a dog though. I just flip it over with my tongs and do what I need to do. Its fast and easy for me to have the flip top pans.

Not sure. Im meeting with the people that I lease a cart from to work at the beaver. Im going to try to work something out with them where they will allow me to use my own cart in their "zone" until Covid restrictions are lifted and I can make enough to pay them again. We shall see.

Hi Dan. I'm happy to see you with your new cart. In NYC there are thousands of hot dog carts and everyone of them uses the hinged lids, they're much faster to operate. Some of them flip those lids around so fast it's like they're playing the drums! What are you planning to do with the grill? Are you going to continue with the dirty water dogs (my favorite being from NY) or are you going to start grilling them?

Definitely keeping the dirty water dogs! Its much more efficient than the grill. Ill probably use the grill for brats and burgers later down the road. I LOVE the hinged lids. They are a LOT faster.

I use lift off lids and a roll top over my steam pan. Steam sausages and buns under the roll top. Dogs in regular pans. I will be watching to see how those flip tops work for you. Sling on!

I use the size pan's that were on your far right chili and cheese or otherwise I'd run out of both, but I have regular nachos=white chips with cheese and jalapeno's ( chili optional ) Frito pie which is obviously chili and cheese with onions and jalapeno's. Doritos with cheese and jalapeno's ( chili optional ) So I'm about to go up in price on all my nachos because I've been letting everyone load up on all toppings for the same 3 buck's to build some customers up but new year new changes

Dan how deep are your chili and cheese pans, plus did the HEalth dept approve the hinged lids? I’ve heard some HD won’t approve a cart with hinged lids, because bacteria can build up in the hinges.

The chili and cheese pans are 6 inches deep. My other approved cart that I lease has hinged pans, so that won't be a problem here. Ive heard a few people say that they aren't allowed to have them in their area.

Not an issue at all. Its removable, so I can take it off and slide it under the cart when I set up at a location.

Dirty water is made by mixing different types of ingredients to the hot dog water to add flavor. I use Hormel chili, no beans.
