Great to see you use the smoker. We do a fair smoked here too. I normally use Maple syrup, but will give soft brown sugar instead as less messy & it saves buying something specifically for smoking as we always have brown sugar in the cupboard. I guess the good thing about syrup is that the fish won't dry out if over smoked, which can happen more easily with our titchy fish.
