Leave the skin on the Salmon! it's where all the flavor is and it will help smoked Salmon retain the moisture. Cut up the stuff you skinned off and deep fry into wonderful Salmon skin chips. Use the bones/carcass for fish soup.

Thank you for the recipe!! Got a big fat 5lb slab of salmon in the fridge for day after tomorrow and I'll try this on some of it. If you like a filet that's like a salmon flavored (roasted) marshmallow try this out: garlic salt lemon pepper and sugar grilled until half cooked then switch to a buttered pan set on very high heat place in pan and sprinkle lime juice mixed with sugar and a light sprinkle of mesquite grill mates seasoning until lightly charred and repeat on the other side until preferably cooked. Crunchy outside soft and flakey inside with TONS OF FLAVOR.
