That is how Big Macs in the USA were made back in the 70s!!! Even the 80s, they started to go downhill in the USA. Now in the USA, the famed Big Mac is smooshed down to about 2 inches high, and the bread is smooshed down and the patties are thin and sorry and the one tiny teaspoon of the sauce is nothing like it was 40 or 50 years ago! The sauce used to be the whole deliciousness of the sandwich/burger!! But today......it tastes like cheap sugar sauce!!! I have not had a Big Mac in maybe 18 years! You are making the good ole fashioned Big Mac from back in the day when you got a Big Big Mac for your money. I would not give 2 cents for a Big Mac today. I will shut down my rant now. Yours looks delicious.

Yes I agree, I was in Grammer school when the Big Mac was introduced in the USA, it was so much better. The quality has declined. However, also being British and living in England, the quality of beef used in the Big Mac sold in the U.K. tastes much better. The U.K. has higher standards in the sourcing of the beef. I am going to try RIK's version at home...Rik, you're the best! Love your channel. I especially love that I can find the classic British food my English mum cooked (married to my American dad). I love Big Macs. It's amazing how much they have shrunk in size over the years, yet they still increase the price. I like mine with lots of big mac sauce. My Mum & I have a standing joke about takeaway food places - That they must throw the toppings from the opposite side of the room, for how much is on there. We tend to go to Hungry Jacks now, as the burgers are much bigger.

Mike, I used to have big burgers; I don't go over 120 g now - rarely, anyway. I have a friend who insists on his burgers at 200g (and I have seen him burn the outside before, ha ha ha ). Hey, Mick - the cost of the products isn't cheap - however, it's iconic. There is one thing for certain: they were spot on as a business when they had the idea to put a burger worldwide on a franchise. The last Big Mac I had in the UK was 20 years ago, and it looked like it had been sat on by Aunt Bessie - however, the Asia franchise takes it seriously, and the Big Mac looks like the picture on the menu. The thing is, I make my own now, and KFC its easy, quick food at home at about a third of the price. If you get a chance, Mick, and if you are up for it (I know you cook), Nip in, try a Big Mac, and then make this one! If you like burgers, this is a good one, mate! Best, Rik

Hi Rik. Looks good, can you explain how to de hydrate the onions. What temp / setting.
@BackyardChef
@BackyardChef 10 ай бұрын
I can mate; for the onions used here - they are not dehydrated crisp - Now I did know that the onions in Mac's were fully then rehydrated - I dehydrate mine to soft - which, in essence, is the same. Now, I bobbed these in the oven at a reasonably low setting, 60 degrees, for around 50 mins. These were quite thick-sliced. Hope that helps. Best, Rik

Good choice in the big Mac controversy. I am almost certain over 30 years ago. There was a touch of horseradish sauce in the big Mac secret sauce. If I make it, I’m putting a tad bit of horseradish in it.😂 It is a Information war

Yes there are many purists and many against. The Big Mac does seem to have changed over the many years. Some claim it to be rubbish. I don't agree. I feel that quality products are used. Sometimes the presentation by the counter staff is lacking and it all looks thrown together. However that said, I prefer to make my own and I do eat at least 3 or 4 times a month. Dry frying the burger from frozen gives a great smokey flavour. Easy to do because they are not too thick. Hope you enjoy. Best, Rik

Big Mac's don't have sweet pickles, they have dill pickles. They also don't come with ketchup. Maybe there's some deviation for your country but US Big Mac's don't have sweet pickles or ketchup. Your buns seem quite a bit thicker than the current US Big Mac and, unless you specifically request they don't do it, they do salt the patties. Other than that your process looks relatively sane/plausible.

Too bad Burger Chef went out of business, they had a thiple bun sandwich like the Big Mac, called the Big Chef. Very similar but their meat was char-broiled over a flame, and was soo good😋. Also had a large burger like the Whopper called the Super Chef. In the late 1960's could get small burger, fries & carton of milk and get change back from one💲Dollar. In 1982 a McD Big Mac Combo was $2.00 even...tax included, plus you didn't have to fight with them about half empty fry containers, lack of sauce or cold food. Fast food so bad and expensive don't eat out anymore☹️.

That really is pathetic, Derek - look at the ingredients and then probably look at the court case properly - was it the way the ingredients were prepared - this video shows how to make a Big Mac.
