I live in south of India, where we get close to 300 days of sunshine. We don’t have the tradition of preserving food the way you do..coz we get seasonal vegetables (I am a vegetarian). Having said that my family makes the most amazing mango pickle.. we make pickle right from small tender mangoes to till it begins to ripen.. we make sweet mango jelly and mango jam and sweet and sour mango chutney (to die for).. I am amazed at the amount of work you put in during the short warm period to harvest and preserve for the harsh winters.. more power to you ❤

I will never get over the fact that you consider -30°C a warm winter. I live in the Mediterranean region, we don't even get frost most of the years so it's mind-blowing that you guys can survive those temperatures😭

Our winters are definitely within the -30°C realm (I live in US so we would say -22°F) but we wouldn't call it warm either. We have a few days that get that cold but below zero is typical winter.

You get used to it and learn how to dress for it, the snow looks like diamonds when the sun hits it when it is that cold!!! It is truly beautiful and a welcome rest for if we never got a frost we would be growing all the time. We love hibernating and eating our bountiful harvests.

French cooking uses quite a bit of tarragon and tarragon vinegar. Love it in homemade vinaigrettes.

Good harvest!!! I am not sure I will get any butternut either - I even tried a bush variety but seeds did not come up well.

Beautiful strawflowers! ❤ I overwinter my lavender. It’s in a lick tub and I just put it in our garage (has some light from a window) and water it about once a week. In the spring after frost is no longer a concern I put it back out and it picks right back up 😊

In watching this video I noticed that you have multiple clusters of gorgeous sunflowers, along the side of your gorgeous garden. How did you plant them in clusters like that are they planted around a pole that you can then secure them too, to give them physical stability? I live in apartment in the state of Ohio but the landlord allows me to plant things on the side yard and I've noticed that the sunflowers do tend to lean over. So that is why I am asking. Also do you give them a particular nutrient mix?

It’s just one sunflower, a volunteer hybrid from last year, and they’re not staked. Truly beautiful!

When you harvest your celery, you leave the roots in the ground. Do you just leave them there over winter to compost?

I heard that, for cooking, you want french tarragon, not russian? Also, that french tarragon grows from propogated plants not seeds like russian tarragon. Anybody know if this is true?

I am glad big time I have found your Vlog channel as they are always so interesting big time... How do you grow your Onions that big could U show us next year or is there a clip I can watch as we are in Spring is Australia now or the start of it and I have never grown them before... I also thought to tell you I have been told Sage Tea is good for Woman's change of life when you get hot and cold...as in body temperature... Why can't you make Sage Vinegar with it aswell as I have never seen it on store shelves but it must be used for other things... I see other people making that garlic and honey mixture for winter times...I will have to try it for myself next winter... You mentioned about you are reprinting your cookbook how do out of Australian get it...please...would to buy it...❤❤❤...😊😊😊

One reason her vegetables grow so large is that she is far north, so the summer days are longer. Maybe the same is true in the south of Australia in the summer?

My Mom used to make 'special' dishes for Thanksgiving. One of them was Tarragon Peaches. As I recall, it was a can or two of canned peaches with a bit butter, brown sugar bit of cinnamon and a teaspoon or tablespoon of tarragon vinegar from the grocery. It was very good and such a good addition to our usual Thanksgiving feast

I find earwigs all over the garden. My understanding is that they eat garden beasties but really have to clean and inspect everything that comes out of the garden. I pulled some cockscomb flowers and the flower itself was full of earwigs. Definitely not my favorite thing to do... This is central Michigan.

If you want to keep a nice colour on the cut straw flowers, you should have them dry in the dark. Sunlight will bleaches the colours away.

Happy memories for me …… I used to grow straw flowers in abundance and always loved them. I’ve had to stop gardening because of a stroke I had 4 years ago. But I love my KZbin videos….. up popped some straw flowers😍. I used to buy florists wire to help me with my arrangements. We just cut the heads off and pushed the wires in. Maybe you do that too. Love from Belfast Northern Ireland. (PS…. I love all your gardening, cooking, canning videos…. very interesting).

I'm not sure if they can ship to your area but I'll bet you can plant in a Greenstalk planter. A aunt of mine had a stroke and is using a wheelchair or a wheeled walker with a seat to get around. She always had a kitchen garden and really missed not being able to get out in the yard. We got her a large pocket (10 inch deep) Greenstalk with a extra wheeled base and a extra tray to make 2 towers, 3 levels high. She has them on her back porch and because they spin and move she can move them around from her seated position. She loves them so much that her family bought her the smaller pocket tower (7 tiers and 7 inch deep pockets) for herbs, salad greens and plants or flowers that have shallow roots. They also ordered a extra base to split it into two She grows everything from cherry tomatoes, bush beans, all her herbs and flowers right on her small patio outside the door.

Just a heads up on the Strawflowers... The ones with open centers may go to seed while drying in the greenhouse. From my experience, if I want to dry them for crafts or decorations, it's been best to harvest them when some of the petals are still closed around the center yellow portion. But congrats on your growing skills, because I've never been able to get mine so tall and florifrerous as yours!

France uses a lot of tarragon. You can also use tarragon in place of dill in pickles (tiny ones) which are called cornichons.

They are some lovely onions. I had one of my Northern Candy Squash shriven on the vine like your pumpkin. No idea why, although there was a slug having a chew under it, but I don't know if that was the cause, or after effect.

What zone are you again? I'm 6a & lemon balm overwinters no problem for me. No need to try to bring in. It will look dead, but then i's the first thing that turns green in the late Winter/early spring!

Earwigs are such a nuisance in my garden here in Vermont. They live in many of my veggies and do a lot of damage to my flowers like zinnias and dahlias.

A few days late in watching this video but found it really interesting how shocked you were to see EARWIGS! .. We have soo many in Hrsfly. I found 12.. Yes 12 of them in 1 head of my cauliflour this year! Some have said they are good for the garden??🤷 Persoanlly I hate them, they are the one bug that creeps me out! 😅

We have plenty of black bear and the large honey producers use a heavy duty 3 wire electric fence around their bee yards. It does keep the bears out. Every now and then they may damage the fence attempting to get in but are not sucessful.

Also...the Allysum growing in front of your raised bed..is it actually growing out of the raised bed or in front of it? I tried growing lavender from seed twice and wouldn't grow for me,...Im in South Carolina..not Canada.

There is a short lived perennial sage that I have overwintered (2-3 years) in the ground in Zone 3b. I have been told there is a difference between Russian and French tarragon. Can anyone describe the difference?

I had friends from Azerbajan who ate fresh Tarragon leaves with their sandwiches. I like Tarragon vinegar but didn't like eating it raw.

I get terragon vinegar from Amazon by the case. I think Heinz makes it. We make salad dressing using it. It’s my favorite vinegar.

Hope your sniffles are all gone and that you are feeling better. My onions are maybe 2 1/2 inches in diameter! I'm about to give up on growing them! Loved seeing your tarragon also- gosh again, my plant is so small! I must not be loving on them as much as you do!

Tarragon vinegar is used widely in France. Love your enthusiasm and energy. Your a wealth of information. I used dried flowers and sweet annie and other herbs to decorate my Christmas tree last year. It was really pretty and a big hit with friends and family. Thanks

Chelsea, I love how how you preserve so much. I used to can a lot more than I do now but I still want my own so I know what’s in it. Could you give more information on your garlic honey you put together the other day? I’ve been telling friends about it and they also have questions so we do it right. Do you keep it on the countertop all the time and is it taken every day and how much? Sorry, 😌 so many questions. This is the first I’ve heard of this so I don’t want to guess at it. 😁

We got our first frost here in zone 3 in Northwestern Ontario near Thunder Bay. I didn't get out to cover some got it and some didn't like my ground cherries, peppers and tomatoes but spared the pole beans. Corn is touched and so were the cantaloupe and sugar baby.

Earwigs were a major issue for us in NS this year! Way more than we usually get, found them in my cabbages, my flower heads, the corn everywhere!

You can insulate a raised bed by surrounding the bed with bales of hay. It could help your herbs overwinter.

You must check whether you have the French or Russian taragon. The French one is the one with the stronger taste.
