This biko recipe is not too sweet with a perfectly sticky and chewy texture.
Biko (pronounced bee-koh), a rice cake, is a native Filipino delicacy where glutinous rice is cooked with coconut milk and brown sugar then topped with caramelized coconut milk.
Traditionally, biko is served on a bilao, a round wooden bamboo tray, lined with coconut-oiled banana leaves, and is a popular dessert for every special occasion like birthdays, reunions, and fiestas.

INGREDIENTS
TO COOK RICE
▢2 cups glutinous rice - - washed and drained
▢1 cup canned coconut milk
▢1 cup water
▢2 pieces pandan leaves
LATIK SYRUP
▢2 cups canned coconut milk
▢1 cup dark brown sugar
▢1 teaspoon vanilla - (optional)
▢vegetable or coconut oil - - for greasing the pan

In college a Filipino friend’s mom used to bring this to the dorms and we all used to go crazy for it! That was over 10 years ago. I was getting nostalgic for it and thought I’d look up a recipe, looking forward to trying this! Hopefully I’ll be able to find those leaves

I'm phillipino, my mom used to make this for our dad, both are gone now. I was looking how to make for My brothers,, this is awesome, can you give the recipe... really thank you,,glad I found this recipe. My dad and grandpa came from the phillipines, they would eat this all the time...

My college friend use to bring this back to us when she went home on breaks! Her mom was an amazing cook and when we went down to her house on visits she’d make a pan full of this, we absolutely loved it and I miss those days!

In Malaysia we call this wajik or pulut kacau (sweetened glutinous rice) but everything is done on the stove top. The sugar we use is palm or jaggery sugar.

Hi! I’m uncertain. Does the rice need to sit in water for a few hours before cooking? Usually that’s what I do with glutinous rice so unsure if cooking it straight away will produce same texture results. Appreciate your reply! :)

No need to soak the glutinous rice at all since you will be boiling it in coconut milk and water.

I have a question: since there are no pandan leaves near me, can I use pandan extract? If yes, then how much should I use? Or maybe I shouldn’t use it at all and instead put vanilla?

You can use about 1 teaspoon pandan extract. The problem with cooking it fully is that it might turn mushy when you cook it further in latik syrup later-on. Cook it just a bit al dente so it can still absorb the latik syrup.

Pwede po bang yung typical na rice po yung gamitin? Yung kanin po na niluluto natin araw araw and yung coconut milk naman po pwede po bang gatas?

It has to be glutinous rice to get the perfect texture. :)

@foxyfolksy May I ask you how I would make this Biko with precooked sticky rice and a microwave? Or if it's even possible (I have the brown sugar and coconut milk) and is this also called Kalamay?

Yes this is also called kalamay in othe provinces. I do not have the specifics on how to cook the latik syrup using a microwave, so just heat and stir until it is thick. :)

@@FoxyFolksy thanks but I think my latik is not that brown color coz I just used the light golden brown sugar I could not find a dark sugar 😀! Ang the leche flan it says 180 c = 350 degrees in the oven 30-35 minutes but mine is half cook still so I put it for another 5 minute hopefully it’s not hard 😱thanks again !

@@FoxyFolksy my latik didn’t came out like yours dark brown is it becoz I used a light brown sugar ? and didn’t get thicker like yours ! 😭

Yes, it has to be dark brown sugar. And you have to keep stirring until it thickens into a caramel.
