This is my favorite episode for sure. Bill Burr is just a gem. He even called out that the last sauce isn't as hot as the others. They definitely put a milder sauce so the guest ends on a high note.

@@aarono8979 Nah, that Da Bomb sauce isn't any good. I tasted it once and never touched it again, not because it was too hot for me but because it's absolutely lacks any flavour and is just hot and nothing else. Because a sauce being hot and nothing else is just boring - in my opinion, a good hot sauce needs additional flavours to help actually savouring the hotness of the sauce itself. I personally prefer if a sauce combines red hot with a slightly fruity note like e.g. mango or tasty bell peppers, alternatively some distinct citrusy note like oranges, lemons or limes (the real thing, not just some aroma), or garlic in antiviral doses. Although a slightly acidic note of some good vinegar like with Sambal Oelek also can work quite well, and if you want to "taste outside the box", ginger too adds a slight hotness, but also a really great taste. Oh, and don't get me started on hot dishes or drinks based on milk or yoghurt (i.e. fatty contents because fat is a great flavour carrier), that's the ticket. For instance, for a nice drink you can take some traditional Lassi, add a tiny bit of mango juice just to get a slight fruity note, and then throw in a little powdered Habanero which rates between 200.000-400.000 SHUs - or if you're feeling adventurous, a wee bit bit of powdered Bhut Jolokia or Carolina Reaper. Or just go for a really good Curry and spice it up carefully in tiny increments until you find the sweet spot. Another interesting combination is to get some Durian (be careful with them though, because the smell can be virtually criminally nasty) and just sprinkle it with a little salt to enhance the flavour and then add a wee bit of powdered Habanero or Bhut Jolokia just to give it a little kick. So essentially, sauces which just only boast with their "impressive" SHU score and nothing else are just for greenhorns who think they need to prove themselves at frat parties or similar functions, while a connaisseur of hot taste takes the hotness in stride (i.e. just accepts the sweating, burning sensation etc. as tasty part of the package) while enjoying a well-balanced combination of hotness and various flavours.
