For Bill in regards to flakie crust. I have 3 essential tips: 1. Sub vodka for 1/2 of the water required for the recipe. The booze and flavor of booze bakes out, but the textures amazing. 2. Always blind bake before filling. 3. Weigh out the water from ice water holding back the ice. This will help keep the butter from melting completely when working the dough.
