I'm an NC native and I rem growing up at the beach and every restaurant would carry some version of this pie! Such great memories, need to make it again - also if y'all are passing thru, try the BBQ in the eastern part of the state, best in the country!

The lemon filling part has been around forever. I have my great grandmother's recipe cards from the 1920's and 30's and she has the recipe for the lemon filling. She used a graham cracker crust with meringue making it a classic lemon meringue pie. I am gonna try this variation!! Looks good.

I make a similar filling, but I fold in the whipped cream to make it fluffy, and add more plain on top!

First of all, congrats on your upcoming family addition, secondly, I made this and used 2 parts lime and 1 part lemon juice, I also sprinkled candied grated lemon zest on top. Awesome recipe though, thanks for sharing.

We've noticed since moving to the Atlantic Beach area revise of cracker crumbs crusts. Too many do not bake the crust enough. Yours looks better. Can't wait to try Bills recipe!!

Love the name “Beach Pie”. I live in the Midwest but have been too US beaches North (Great Lakes), South (Gulf Coast), East (Atlantic off Cape Cod), and West (Pacific off San Francisco), and I love anything called beach. It's a Key Lime Pie I was born in Key West. Practically everyone in my family can make this.. minus the saltine crackers. Graham cracker crust not optional

keywestconch8 I make key lime pie from scratch. I knew this had to be a spin-off of the key lime pie. I never heard of a saltine crust. I love Key West. I lived in Fort Lauderdale for a number of years.

So I made this pie. It is chilling now but I added a tiny bit of sugar to the crust and I browned butter and refrigerated it and whipped it back to soften butter consistently and mixed it in the crust instead of plain butter. I hope it is good oh yeah and I added lemon and lime zesty in addition to the kosher salt. And vanilla in the whipped cream but no sugar

My very 1st time making a key lime pie was a few days ago, and it turned out okay. I didn't use any egg yolks & honestly there was a bit of a bitter note to it. Well I did some research & found out that I had used the wrong type of limes (only had those large, golf ball, Persian limes available), and I probably should have used the egg yolks. Well make an attempt at making this saltine cracker lemon/key lime pie. But will make sure I use the eggs & wait until I can get my hands on some real key limes.

My husband has lived in NC his entire life also, and he too says he's never heard of saltine cracker crust. Furthermore, just because someone wasn't raised having this pie served during their upbringing doesn't mean they're stupid. Lack of knowledge... 😡 Now he's heard of it. Does that make him any "smarter"? 🙄

@@paulaw418 on Tara's Keto Kitchen you would find a hazelnut base and lemon curd filling. The only correlation with the Atlantic Beach recipe is the whipped cream with salt on top. Up to you. There are others maybe with almond flour. No wheat being allowed, of course.

This was my nannies pie. Bill Smith who? : ) Just kidding. She used graham crackers and meringue. Which is the one you were mentioning. She called it lemon ice box pie-served ice cold. Will encourage my mom to try it this way. The woman ADORES saltines. She makes a mock apple pie made out of ritz crackers, so she just may take the dive into the Atlantic Beach Pie of Bill Smith. ~ As for "THIS RIGHT HERE..." is simply magical isn't it?
