Firstly, in a large bowl take 4 tbsp semolina (fine grained ) and add 2& 1/2 tbsp of fresh curd , mix it well and keep aside for rest foe 10 minutes .
in a large bowl soak 1 cup moong dal in water for 2 hours.
drain off the water and blend to smooth paste adding 1small size green chili ,1/2 inch ginger , 1 tsp salt and 2-3 teaspoon water.
transfer the moong dal paste to a bowl .
now cut bitter gourd into small pieces and soak 1/2 cup of toor daal in a bowl , then in a pressure cooker pour both items and add 3 cup of water then add salt and turmeric , and whistle 3 times .
for sambhar tadka :-
coriander seeds - 1/4 tsp
mustard seeds - 1/4 tsp
gram lentil - 1/4 tsp
curry leaves - 8-9
dry red chili - 2
oil - 1 tbsp
onion medium size - 1 ( finely chopped or paste )
tomato - 2 medium size ( finely chopped or paste )
red chili powder - 1/2 tsp
coriander powder - 1/2 tsp
sambhar masala - 1 tsp
firstly in a pan heat 1 tbsp oil and splutter all tadka and add onion and then cooked it until it gets light brown in color then add tomato and add masala in it and soft it then add boiled bitter gourd and daal in it and cooked it well. sambhar is ready now ..
make green and red chutney with coriander leaves and tomato ...
mix daal paste to idli paste and make idli to add fruit salt or baking soda in it .. then serve it with hot sambhar and two type of chutney ( green and red ) and also u can serve coconut chutney ... enjoy your meal .
