The reason why the wheat cakes aren't sweet is because aunt may purposely left out the sweetener in the recipe so that Peter had to visit her to get them. That's why they never worked out on his own.

Gyouza's their Japanese name. In Mandarin they're Jiaozi (the zi is pronounced like it's just dz~tz in its own syllable), which through modern Japanese phonological rules is also the name of the Chinese vampire guy from Dragonball, Chaotzu. The Japanese name is pronounced gyoh-zah because that reflects their middle Chinese pronunciation or early Mandarin pronunciation, which would have been like 'gyao-dzih' back when Mandarin and Cantonese were the same language. Koreans call them gyoja and the Cantonese call them gaauzi. I was expecting 5 spice powder at some point myself.

The dumpling recipe is very similar to my grandma's. I think what makes hers stand out she also adds finely minced raw shrimp (into almost a pasty consistency), which makes the filling extra chewy and tasty. As you can tell, I LOVE making dumplings! bruh your dumpling crimping skills are top notch for a first timer....but a few tips: it’s faster if you hold them up in your hands, and instead of folding both sides equally, one face of the dumpling should have less wrapper, and just the outside layer of the curve will be crimped. this results in the classic curved shape. Also, crimping is waaaayyy easier with softer homemade wrappers and doesn’t need the water

Also thank you for the dipping sause recipe. I have never been able to find how it was made. No one sells it packaged which in my opinion is a niche that could be filled by any entrepreneur out there

For the dumplings, I like to put oil and water into a cold pan, then put the dumplings in and cover. That way, when the water evaporates, the oil is left over and it will pan fry the bottom.

In my family how we make dumplings is a little bit different. When we make the filling we taste it by slapping it in the microwave to see if it’s good or not and we adjust, that’s why my family doesn’t have recipes we season, taste, season until it’s perfect

I think I just figured out how Peter caused a kitchen fire when he was making the dumplings. I think he may have added too much oil when he was frying the bottom of the dumpling and then he adds the water pushing the oil out the pan into the flame. I love that the recipe actually contains a step where an untrained chef could reasonably start a fire.
