The second one would probably work better if you layered pizza dough into it, almost like a lasagna, then waited until it cooled off before cutting into it. There's a good chance the dough wouldn't cook properly though, so maybe pre-bake the dough layers. Idk... just an idea.

I would use flour tortillas for structure, kinda like a tortilla lasagna inside a pizza ball. No way pizza dough would cook with all that weight... * has a genious idea* unless you turn it 90 degrees so dough layers are vertical. Bet they would be kinda raw on the bottom and puffed up on the top so you would get a fan like cross section.
