Andrew, my extended family made the Four Horsemeals of the Eggporkalypse for our Christmas dinner this past holiday season (with a couple store-bought substitutions to compensate for our lower cooking skill). Me, my sister, my two brothers, my sister-in-law, my mother and father, my paternal grandparents, my maternal grandmother, and my cousin all had to split it into two separate meals. And thanks largely to your recipes, it came out absolutely delicious and pleased EVERYBODY.

Starch loves water and the natural starches in a potato are already somewhat wet whereas powdered starch is totally dry and will suck up any extra water in your hash. Water is really THE enemy of good hash browns and tots. It makes a difference!

@@confusedwhale Salt water isn't going to have the same water drawing effect that dry salt has. Swapping the water for salt wouldn't do much aside from seasoning. If you do want to try to use salt as a drying agent, the best stage to add it would probably be the towel drying for the first hash brown method and the sqeeze drying for the second. Would be an interesting experiment!

My advice, buy a house and stay there. I also had a ton of moves from age 6-22, and have developed an absolute hatred of moving. It is also quite destructive financially, if you plan on retiring without a house payment.

It’s weird I’ve been here since the “Frasier theme song” days I remember you making timpano(sp) making pasta at 4am going crazy talking to yourself watching Frasier reruns in that tiny kitchen...I remember the garbage plate and feeding your old roommate mac salad blindfolded I remember the first recipe at this kitchen...I think it was the bubblebass order and being amazed at the size of your stove.
