From someone who just did the oven risotto method two nights ago, it works perfectly. You just overcooked yours. You need to take it out when it's still slightly water. Stirring the rice will mix in the starch and, along with the butter and parmesan, will make it creamy.

So I tried using Andrew's risotto recipe to make risotto yesterday. I used homemade vegetable stock and added some sauteed mushrooms at the end to make mushroom risotto. That said, I had to use more stock than what the recipe said, more close to 4 cups of stock.

@@Xartab what's the hot water supposedly doing? Seems like a small amount just warms up the pesto. If it slightly cooks the basil is not going against the purpose of having fresh basil? Never tried that trick before.
