Binubudan or Binuburan, Binurburan, as they say in my province. 自制酒釀 in its Chinese or Szechuan equivalent. It is rice wine dessert, another flavour from my Pangasinan (Szechuan, Vietnamese, or Thai) here on Channel Juan. It is a self made fermented sticky rice & rice wine from scratch , which is used in many Chinese, Thai, Vietnamese and Pangasinanse traditional desserts. The rice wine is sweet and full of flavour, which is a nature additive for many pastries.
I'm making something so basic from scratch from very simple ingredients, just cooked rice, yeast balls and some sugar.
I will be splitting the batch; the first half, I prepare using the traditional yeast balls, one ball per one kilo of rice. The second half, I use ordinary yeast, the yeast used for baking breads. Let us see if that works.

Great to hear! Let us celebrate! Did you use corn starch instead for dough B. It will make the layers more visible and more flaky and crunchy. I did use the same flour by mistake last week. It was still flaky, but corn starch is better.

Hello, Manong! This is awesome... your making of binubudan (as we call it). I've been wanting to eat this for a very long time but I didn't know that we can get the rice ball yeast from Amazon. My lola used to make it ... and yes, we like it sweet. We use very good quality rice so it'd be tender. We serve it chilled (for several hours). Now, I'll try to make it. Thank you for posting this video.

I've been fan of binubudan since late 60s. Nasursurok kenni mother ko ti agaramid ti binubudan...isu nga kanayon ak gumatang diay Baguio city market ti bubod balls. Engana itatta no malagip ko agaramid dak ta maimasan nga dessert dagiti bisitak ditoy Umingan, Pangasinan

Channel Juan - Kitchen & Garden, My Grandma and my Mom occasionally make binubudan when I was growing up in Pinas during the 60's. I tried to make some few years ago but it didn't work cuz I used the yeast for making bread here in the US. We immigrated to US when I was 15 years old and I never tasted it since then. That's 54+ years ago. I was craving it the other day and I cannot remember the Ilocano name of this rice wine dessert. Thanks to Google search, I found your channnel. I should remember it now. Thanks for sharing the recipe. Much appreciated. BTW, my mom use d to make Binubudan Cassava roots also. After peeling the cassava roots, she boil it until its soft, drain the water and sprinkle the yeast on top of it like the rice binubudan then let it set for 3-4 days or more until you see the juice formed and the smell of wine aroma.

Ah budbud yata ang tawag nito sa amin nakatikim lang ako nito but I’ve got no idea how they made it not till this time po and nice to know ganito pala pag gawa nito I think ganun yung yeast pag ma boro na sya ng few days maasim na sya atsaka pala I remember the budbud that they made is with corn rice at gusto ko tong recipe nyo po thanks for sharing

Hmm so yummy! Favorite nmin yan po..alam ko din gumawa and even my apo he likes to eat. Ang d ko lang alam kung paano gumawa ng yeast balls..mahirap oasi bumoli dito sa Manila hindi alam yan. I usually order in my province Isabela or Aurora province para makagawa din ako dito sa Manila. All my kids favorite! Ilocano nga talaga!😄👍Thank you po.

umuwi po ako nag Pangasinan .araw araw bumibili po ako ng binuburan hehe..nong paalis na ako bumili ako ng yeast para e try wko gumawa..nasubrahan wko po ng sugar..matamis masyado.maganda raw po sa may ulcer ang binuburan..mahal na sa amin yong isang bilog na rice yeast 35pesos na po dati 5 pesos lang..bili pa rin ako😅

I was born in early 80's and my Mamang (lola) used to buy this every Sunday, I really enjoyed it growing up, sadly, over the years, only few left were selling in Malasiqui public market, luckily I was able to buy the yeast yesterday, and I am excited to make binuburan. What the bubod seems to do is break down the complex starches in rice into simple sugars that then ferment into alcohol. Yeast seems to skip that step entirely. Probably why it's so sweet with bubod.

Awe, buro recipe. DIY. Wine.sosyal Curious ako.. I'm wrong.. dessert Pala... Akala ko buro may guest Ka kuya.. mas masarap ang malagkit yeast balls.. wala niyan SA pinas. Mukhang naptalina.. powdered. Pwede na Rin Kaya ang powered yeast Yung color brown? Awe,bitter ba.liked 2 kuya.. Ayan day 2 na.. maasim ba Yan? Yeah dry Yung SA instant yeast. The 3rd one sour.. throw it kuya.. ah sugar is added. "Khao mak"
