I am 65 years old from Tennessee/Georgia and all of my relatives cook biscuits and gravy a completely different way. We start with a pan of sausage or bacon grease, add enough flour to make a somewhat thin paste and cook on high to brown that is key. Then start adding milk and stirring like a mad man to keep the lumps out and also adding salt, pepper. bringing to a boil is also key to the thickness you want. that is what it is all about. We serve the sausage on the side and pour the gravy on the biscuits along with scrambled eggs on the side. Sometimes we will crumble the sausage on the biscuits and gravy. Point is I have seen it your way and others doing the same thing and I am going to give it a try. You can teach old dogs new tricks. Can't wait to give this a try. 67 year old Alabama boy here. I make it almost the same as you. I always cook at least 3 pieces of bacon, put it aside leaving the grease. Then I fry one thick slice (from a Jimmy Dean Sausage Roll) and mash with a fork. I add a couple slices of butter, and sprinkle in a tablespoon or more of flour when the better melts. I mix until until the flour dissolves leaving a slight watery mix. I then add milk (yeah cold), salt, black pepper and a splash or two of worcestershire sauce. Stir until slight boil, then low heat. I remove just when it starts to thicken and put in a bowl. It thickens more after 5 minutes. I then take my freshly made homemade buttermilk biscuits from the covered bowl on the table. Sprinkle a little bacon and or sausage on top of the biscuit and add that good gravy on top. I add a little Golden Eagle Table Syrup on the side and some fresh black coffee. Maybe a couple eggs with hot sauce.. You will NOT find Grand Biscuits in my house, only freshly homemade. Yall come get some....

I have always mixed milk and flower together before adding it to the sausage grease and have never seen it done this way before. This is one of my favorite breakfasts and is a family favorite for holidays, and I am so going to try it your way. I can’t thank you enough for your videos!

Just got my cooling racks for the griddle, considering a rectangular dome for biscuits, though I do have the top on the Blackstone 36", so I can keep cooking on the griddle while the biscuits brown. I used the stargazer cast iron skillet on the griddle, thanks for the recommendation, it worked perfect. I did preheat to 250 first. Also used it for bacon and sausage, great flavor.

The thumbnail tripped me out a bit on the biscuits with the waffle effect from the rack lol. I love biscuits & gravy too, my grandma used to make B&G from bacon and country ham as well. Your gravy is spot on! Finally did chicken thighs on my griddle yesterday and doing French toast this morning.

Thats the trick that i swear by. Cool if off before adding cold liquid. It incorporates so much easier. Almost fool proof really. Im always surprised more people don’t show it.

After you add the milk and it starts to boil, reduce the heat but keep stirring. Just when it starts to thicken, pour in a bowl and set aside 5 minutes. By the time you get plates , coffee and the rest, the gravy will be just right. My mother made it for 50 years and I've made it for several years. Neither of us have ever removed it from the heat. If that works for you, go for it. My way works every time too.

I saw this idea from another cooking show for B&G (biscuits n gravy) -- try adding 1/2 c of finely chopped onion to the sausage and when adding your milk add 1-2 tablespoons of W sauce (can't pronounce it and probably can't spell it either) to the mix. It tastes amazing and adds a whole nother level to the flavors, I think you will like it.

You are correct you should never use cold milk or cold water into the hot skillet with the roo. The way you do it is you warm your milk or you warm your heavy cream or your water and then you add it to the roo.

Hey, ever tried roasting oysters on the flat top? I'm assuming you can get the temp fairly high throw some oysters in the shell on there and cover with wet burlap. My question is would the heat and moisture harm the griddle? I just ordered a camp chef, looking forward to giving it a go.

What temp do you cook biscuits on?

My first attempt making sausage gravy. I had no where near the liquid after adding the flour. It seemed to all suck up and dry up. I added a bit more oil, but there was not the liquid content you show.

Two rules of thumb. Equal parts of fat vs flour is standard. Example 3tbsp fat equals 3 tbsp flour. The last one is have more fat to flour than more four to fat which sounds what you have. To much flour vs the fat you had. If that happens you can add any fat too thin the roux out to the consistency you are looking for. If the flour is to thick and sucks up all the fat its incredibly hard to make smooth gravy.

Honestly I cant say right now...I will rewatch the video and guess typically its about consistency I look for...remember it has to come to a boil and be able to cool slightly before your true thickness...

" Tablespoons"...with a fork. Lol. My bf turned me on to you. I am a full on southern/ restaurant raised girl. ( LOL. I'm 60.) You do do basic, wonderful, down home, REAL cooking...outside. I do in the kitchen with my iron. (Only IRON btw) Him and I are trying to "marry." We are following you so maybe we can cook together instead of separately. Amy. You are so cute. You and Neil have an attractive groove and a personable twist that makes your teamwork WORK. Your 2 cents and him feeding you a taste 😍 I think appeals to us real people in the masses with a mate. Well, you're the first to truely nonstop post about the pit boss griddle that its to say others having be uploading about the pit boss griddle perhaps once a week or in a collaboration video with other youtubers but you sir are putting it through its paces the way the manufacturers like it done nothing wrong with free publicity when done right. But I will stick with my camp chef although I do like the one thing about it the easy of clean up
