It's really difficult to set up, in a HEMA environment. First of all you both have to have Halberds, and enough room to swing them, to practice these plays. It's not so much underrated (Halberds were always very highly rated, ever since there's been halberds) as clunky, and cumbersome in the modern day. You can't just throw a couple in your trunk, and drive to the gym, like you can (Relatively speaking) with swords, and shields. They're like 10'(3m) long! If you ever tour, or even watch a walkthrough of period buildings, they didn't have 8' ceilings. More like 12' in rooms were people were likely to be walking around with Halberds, even in the halls.

Personally, the counterattacking style is an approach that suits me, but I must say that practicing with the halberd has given me new strength and fitness goals. It is a weapon that rewards your physical commitment.

I don't know how you would demonstrate the use of the hook and spear blade in consort, but if you sink the hook in the clavicle aeria it acts as a pivot point so you can use that leverage to cut your opponent's head off.

I also always try to build up the greatest possible pressure. But it also has its pitfalls if you are not careful. Im sure you know what i mean. To be aggressive makes you always open.

yes...when you are right handed your dominant hand is at the rear end. We have a lot of examples for that in the sources, especially regarding halberds. When you want to handle poleaxes both is possible, also regarding the hist. references. :)

Yeah, double hits were really, really common historically. Even if you killed the other guy, You almost always took an injury or two. That's why pole weapons have such a good win rate in fencing - reach prevents you from being struck as easily by a shorter weapon.
