I visited your website and cant wait to try your recipe! I had a tough time lately with mt macs because they keep getting wrinkly when They get out of the oven, turns out the insides were underbaked, and the shell was soft! I read your post about this and it said that not to overheat the sugar mixture; this could be the culprit since I often heat the sugar mixture up to 4 mins!

yes that has happened to me when I overheated the sugar mixture. Also when I underbake! heat the sugar mixture just until the sugar melts, it should not get hot, perhaps a bit warm, thats all. and for the baking time, to check if they are baked, try to wiggle a shell around, if it feels jiggly, keep baking. if it feels firm, you can pull the macarons.

Hey love, just came back to this video after watching the Pink Floyd macs. Beautiful work! I wanted to know if I can make black macarons from your chocolate macs recipe. I can't find powdered black color in my country and black gel color doesn't really work for me. It's always grey!

I havent tried with black cocoa powder. I actually purchased it but a lot of people kept reporting wrinkled shells with it, so I decided to just go with the food coloring. No temperature for the sugar and egg whites, just for a minute or so until the sugar melts, shouldn't heat more than that. It should not get hot at all, maybe slightly warm.

Thanks for your video! I was able to make a batch that turned out perfectly. What I didn't expect.. and had to warn people about.. is when you put something with a lot of black food coloring in your body, it shows in your teeth/tongue, and a lot of black food coloring comes OUT of your body. Whoops!

Looks delicious!! What’s the ermine buttercream like compared to Italian buttercream? Is it pretty good? I don’t like Italian a whole bunch cause I think it’s too buttery

it's not really buttery like italian or swiss buttercream. It has a mild, not too sweet taste.

yes since you will heat the egg white with the sugar before whipping you can use it from the fridge.

black macarons are really not recommended for beginners. Or any other macarons that require a lot of coloring. It's best to first master the technique and try to work with colorful macarons once you are comfortable and experienced.

100 grams, it's about 3 large egg whites, but it depends on the size of the egg. its better to weigh it.
