I just made this after following your recipe. It was absolutely wonderful. I set my instapot for 35 minutes and then let them sit for about 10 minutes before venting. Very flavorful and the best I have ever had. Thank you!!

Onion, celery, bay leaves, two cups of black eye peas, one cup of chopped bacon, six cups of chicken stock and pressure on high for 45 minutes with a natural release until the pressure valve drops, remove the lid and season with salt and pepper and garlic powder, enjoy.

Thank you for sharing your recipe! I’m very excited to try these. I actually decided to make black eyed peas after hearing my mother and grandmothers batch today over the phone. Unfortunately grandma added too much water and she sounded really disappointed over the phone 😭 I liked seeing your process when it didn’t come out quite as expected.

Natural release refers to the process where the pressure is naturally released (as opposed to force release when you move the dial yourself and the pressure comes out).

Thanks, for the recipe. A few observations: 1 - It is unnecessary to saute the vegetables - they're going to get softened along with the blackeye peas. 2 - Blackeye peas will thicken the sauce all by themselves without the ghee - which is quite expensive. 3 - Rather than butter, you might try just a slice of bacon. 4 - Chopped fresh jalapeno adds a very nice flavor with a punch of heat. 5 - Salt and black pepper are the only other seasonings needed. Remember, blackeye peas have a very nice flavor of their own that you might not want to cover up with too many other flavors. Although, you can use whatever seasonings you like - they're your blackeye peas, after all. 6 - Consolidate the cooking time down to 30 minutes uninterrupted with the required liquids included from the start to make the recipe simpler. I'm just a southern boy myself who loves blackeye peas! But, I had not done blackeye peas in my Instant Pot, yet, so I just needed the cooking time. I hope my suggestions help. Thanks, again!

This is an interesting take on my recipe. I don’t eat pork so bacon isn’t an option. Let me know if you try it your way, I’m sure it’ll be perfect just the way you like it.

@@WindyCityPeach Yes, the 30 minutes cooking time with about 15 minutes natural release uninterrupted worked great - with a good texture, but not mushy. I enjoy pork, but I didn't have any bacon at the time, so I just used a tablespoon of olive oil - but, any fat would have worked, or even none at all. The chopped jalapeno gave a nice fresh kick. I don't usually use celery and onion, but I did this time, along with some salt and fresh ground black pepper. They turned out great! Happy New Year!

I cooked it the first time as you said and it came out good but the with beans were half cooked. I added the extra time and put them back in instapot and once I opened them they came out TOO mushy and inedible for me.

Depending on what I have planned for the day I do a lot of cooking and like to protect my hands. You can cook with or without gloves in your own kitchen. I make the choice to cook with gloves in mine. Especially when I have a fresh manicure that I want to protect.
