You over cooked it, season it, sear it real fast in a pan no more than 30 seconds, tent it in aluminum foil with butter, heavy on the butter, garlic, lemon slices and pepper put it in the oven on 350 for 10-15 minutes...should come out super tender and juicy.

@@josh-zu1jn Actually, anything that comes out of the ocean stinks like the ocean, but once you've cleaned it for cooking no it does not have a stink........if a piece of fish stinks it's NOT fresh don't eat it. For example rule of thumb when going to a sushi bar, when you walk in the door if you smell fish.....walk out the door, fresh fish does not smell ( stinky). To more directly answer your question.....Everything will stink when dead, the key is how long has it been dead....there is a difference between fresh and dead. LOL

Soak the meat in milk for a few hours! Does amazing things for the shark texture and taste. I tried it a few months ago. It also helps get rid of the urea smell. :)

Buttermilk over night, as in at least 12 hours!! Milk softens texture and reduces gamey flavor plus acidity of buttermilk breaks down the connective tissue amazingly!! Been eating multiple species of shark for over 2 decades ...........and this is my number 1 trick.

in south africa we soak our shark in milk for 24hrs to get the ammonia out, then wash it then beat it with a meat mallet, makes it super tender and delicious !

I got to try some a few years ago, I think your description is spot on! My grandpa was able to buy some at a market and cooked it up for me; if memory serves me well, I believe he said it was rather costly for the small amount he bought. It tasted great but, if I hadn’t been told it was shark, I would’ve guessed it was a pork chop, an expensive one that is!

Oven Braised Shark Creole is amazing. Make a basic creole sauce, but add lime juice to the braise. Cube the shark and mix it into the sauce. Cover everything with foil and bake til tender. Serve over rice. The only way I've ever wanted more shark. Great vid!

Your knife ripped through that shark like butter. Nevertheless, here in Trinidad and Tobago 🇹🇹 the best tasting dish is most likely bake and fried shark. Its a tourist favourite, a local favourite, and my favourite. The key to it is to get a shark that weighs no more than 20 lbs, and if it does, the meat should be smashed or tenderised and battered and fried. Then served very hot with a mixture of ketchup, honey mustard and tabasco sauce. It is the most delicious thing you will ever eat. DATS UH FACT JACK!!! Ohh and thanks for the vids Mr Arrington.

In Kuwait we have this shark recipe called meyadam. We make a shark stock by adding veggies and shark meet and spices then we boil it in water for 2 hours. Then we take the shark’s meat out and shred it. We take the shark stock and add it to long grain size rice and cook it. When the rice is el dente, we add the shredded shark meat on the top of the rice and close the pot in a low heat until the rice is cooked. It’s so delicious you have to make it.

Great job on your videos. I'm from Trinidad and Tobago in the Caribbean and shark is a sought after fish. It's considered a delicacy and is generally cooked one of three ways. You can have it curried or you can have it in what we call fish broth (some countries say fish tea) and the most common way to have shark in T&T is in a popular dish called bake and shark. The bake is a fried dough or fried bread and the shark is cubed, seasoned with local seasonings, floured/battered and fried and served like a sandwich with an assortment of vegetables and an array of condiments like pineapple (sometimes done like a chutney) and tambrand (tamarind) sauce to name a few. All are delicious but my preference is for bake and shark.

I've always filleted blacktips and soaked them in water in a glass pan for 4 days in the 'fridge. Change the water twice a day. This leeches out all the urea, which improves the taste immeasurably. Blacktip is my kids' favorite fish to eat.

I tried shark once in my life.... It's delicious! I can't believe you didn't like it.... My method was I put the shark in an aluminum foil pouch with onion, butter, lemon juice and seasonings.... Seal it up and bake or grill it.... Nothing better....

Make a tin foil packet to cook them. It will come out more tender. Put onions, and papper in the packet with tiger sauce. I learned that trick from the locals when i lived in cuba.

Might have to do with the fact it ran a marathon right before it died and there was no opportunity to clear out the metabolites. If he pulled it up to the boat, tied it up and gave it some time to recover before killing it with a bangstick, and some more prep before cooking it, it might taste better. There is a Japanese method of killing fish that is supposed to result in far better tasting fish that last much longer before going bad.

@@michaelmorgan7388 Worth some experimentation. An easy reference would be to find places where shark meat, not just fins, are served in high end restaurants, like in Japan, maybe the Mediterranean. See if how they catch and prepare the shark is any different. I know the buttermilk is used for the ammonia taste that builds up in shark meat as a metabolic product, after all, very little of their hunting is endurance chasing, it makes sense they wouldn't have the processes to minimize the impact of the extraordinary effects of being hooked, fighting and then giving up from exhaustion and even if they did, those processes are unlikely to take effect in the short period of time between being landed and dispatched. It could be possible that they be injected with something to counteract the metabolic imbalance, like a non lethal, non-toxic chemical marinade pumped through the body by the shark's own heart, which might be useful in making shark meat more generally appealing rather than just looking off the fins like is done in commercial shark fishing. Still have the Mercury levels to be concerned about and chelation takes too long.

I love your vids, I'm also a christian. I have learned long ago that shark meat has to be soaked in salted water (change it when you feel it's needed - keep it clean) or milk over night, so to get rid of uric acid (and blood), then cook it or bake it with tomatoes (so the acid of the tomato gets to work). You will end up with some REALLY soft and delicious meat, then you can season it the way you like most. BUT you have to get reed of the acid that has been built up during the fight, any way you can, before cooking. THANKS FOR MAKING US DREAM. Keep up the good work. God bless you and your family. I’ve been shark fishin all my life. Blacktips and macos once they hit around the 4ft mark their Meat changes concicity from a fish to a fine pork chop. I got the perfect fried recipe for them to where you will change your mind about catching them and eating them

Hi Robert... Here's a tip for cooking the Bluetp Sharl meat. Cut about a 1/4 thick, use tempura batter and deep fry, 3-5 minutes, and your will have tender fried fish. 🐟❤️

I was told sharks pee through their skin and you should soak the meat in milk overnight (or at least 4 hours) to get rid of the ammonia and gamey flavor. We have done that ever since and it always turns out great. Edit: also if you slowly bake it in the oven after you do that, the meat is nice and flakey.

Yup that’s what I just did tonight. Fried shark with some “slap your mamma” seasoning and when served just squeeze some lime on it. One thing I noticed is that he did not bleed out the shark which I usually prefer to do. 👍🏼

The shark meat seems hard because the muscles tense up and develop an ammonia type chemical during the fight and you need to let it rest for a couple of days to let it relax and dissipate the ammonia type chemical. The makos we fish for in SoCal do the same thing so we let them rest the couple of days and it turns into more like a swordfish
