This is one of the best recipe/cooking videos I've seen on KZbin. I was discussing menu items for a Lebanese restaurant that I'm visiting tonight with a friend of mine who is Syrian. He introduced me to Middle Eastern food in college. I was trying to remember the name for the sfeeha (video?) that we used to enjoy at the Lebanon Cafe in New Orleans (Great place, if you're ever there). I wanted to see what Ara'yes looked like for tonight Look forward to trying them and then cooking them!

Yes you can, that is an excellent idea! Because the meat is so thin it will cook rapidly, and make sure to brush the bread with olive oil for extra flavor and crunch.

If you don't have a broil setting on your oven then use 450 degrees. ;)

Excellent question. Fortunately I have not had such a thing happen, but I do treat the platters carefully. Once I remove them from the stove or grill I let them sit a good 15 minutes before serving. By then the platter is only warm and seems pretty safe. As with anything hot, proceed with caution when it comes to children. Those platters are available at Macy's, Bed Bath & Beyond and Amazon. Hello Blanche, I loved your video. I think you have a great personality for the Videos. I recently visited Montreal and I had the pleasure to enjoy a Kanafi Sandwich. I was wondering if you have a recipe for the bread. I think just like all over the world recipes are different from family and regions alike. I like to make kafta with green peppers a mint using a food processor, and some times just add chopped tomatoes for(lagne bel ajim )I think the Lebnem yogurt is also a great choice. Thank's

Hello Blanche..... I've been a fan of your cooking and a subscriber to your channel for some time now! Your recipes are fantastic and so easy to follow! I was wondering..... You said in this recipe you could substitute the 'ground meat' for 'ground mushroom'..... How would you recommend this is done? +schreineinAV Great question, yes first put the mushrooms in a food processor. I suggest you saute the mushrooms in a pan with the same seasoning that you would for the meat. Cook until all the water evaporates from it (as there is a lot of water) Then spread the mushrooms in the pita and cook until the pita is crispy on the outside. Yes actually I do! I like to prep the meat several hours in advance (sometimes even a day in advance) then assemble right before grilling the sandwiches.

Good questions! Yes I know it looks strange, but as you cook the meat high heat, everything gets cooked together (the sandwiches are very thin so they even end up crispy) No issues on my end with the safety of this dish. And yes, you can use a panini press, that is a great idea!
