I made these tonight 12/24. I used the 3 ripe bananas i had and 1/4 cup granulated sugar instead and a tiny bit extra of baking powder along with vanilla extract... DELICIOUS DELICIOUS DELICIOUS!!!

I made these last night and they are delicious and perfect! And so easy! I chopped some pumpkin seeds and raw almonds and sprinkled them on top before baking. Thanks for this amazing recipe 😊

Will they still cook ok without any granulated sweeteners, tho? I have none to use, and don't want to use real sugar. Instead I wish to add honey or agave or dates.

The granulated sugar definitely helps with the texture, but you could experiment with adding a little honey if you prefer! Let me know how they turn out if you try it.

Use half a teaspoon bicarbonate of soda and 1 teaspoon vinegar to substitute the 2 tsp of baking powder. I have done this before and it worked perfectly. Blessings from South Africa.

Plant ingredients that replace eggs can add structure also, and plants have plenty of protein. There's no muffin that needs eggs instead of plants for the purposes that eggs serve in the recipe, that's ridiculous. *I just made these with 2 flax eggs & one chia egg, perfect shape and texture, and delicious. Next time in going to try them with all flax eggs to compare. Don't listen to the part about vegan egg subs not being totally doable.
