"Undertale Opening Theme" Hopes and Dreams is as far as you can get from the opening theme. It's like one of the last 3 songs on the soundtrack.

Knowing that it uses leitmotifs would make it harder to get confused, as he would pay more attention to the background and not just the main melody to be certain of the song. Plus, he's never played the game, so if he heard "Once Upon a Time" before, and then heard the first part of "Hopes and Dreams" it is possible that he mistook the latter for the former. In conclusion, whether or not he knows the soundtrack uses leitmotifs is irrelevant.
