I use white meat chicken, celery, sweet pickle relish, golden delicious apple, chopped pecans, salt, pepper and mayonnaise. It is delicious. This looks delicious also.

But wrapped in your favorite lettuce or bread, it will taste amazing! 😋 I love making chicken salad with rotisserie chicken! It's so easy and flavorful and is one of the best uses! ☺️ And you're right about the weather being so unpredictable! It's cold one day and warm the next! If you needed to stretch this for a large family, you could add the mixture to elbow macaroni. You may need to double the “sauce”, though. I’d add it in increments, until the pasta is coated to your desired preference. Any leftover sauce would be great on chicken or turkey cold cut sandwiches. (Add a little prepared horseradish to it for roast beef!) Yumm!!
