I made this for the first time today. The video is perfect. Your description makes it look so easy, that I wasn't afraid to try it though I've never worked with puff* pastry, vanilla beans, or pastry cream (note* I looked up the difference between puff pastry and filo pastry cause I didn't even know that, and didn't want to buy the wrong one!) It worked out perfectly. Then at the last moment, before assembling it, I spotted a package of home made maple syrup-baked pecans in my fridge ( make them days ahead; pour 1/2 cup good maple syrup onto 1 1/2 cups pecan halves. Spread over parchment-lined cookie sheet and bake at 350 F for 15 min, you can store in fridge for later). Sooo I spread the pastry cream on my baked puff pastry as directed. Then I chopped up some mapled pecans and sprinkled a cup of them over the pastry cream. Finally I placed the berries over the pastry cream and brushed with apricot glaze as directed. So the only addition I made to the recipe was to add a layer of mapled pecans between the pastry cream and the berries. It was outstanding and not maple flavoured at all. However the nice munch from the maple 'brittle' that forms when I had baked the pecans, is awesome. When you bake your own pecans, you end up with a very thin layer of 'brittle', not too much just a little, I leave the brittle in when I store the pecans in my fridge, and it's heavenly. Seems everybody just wants to use blueberries with cream cheese , which yeah I know tastes good too but I feel like eatjng pastry cream🥲

O.M.G.!!! Just made the pastry cream! Absolutely delicious! What a world of difference using a vanilla bean. 1st time making this. As a special treat for my daughter. She’s visiting for a wk. as the university has a fall break. Her flight gets in early. So, this will be a nice addition to breakfast 🙏🏻

When you scraped the glass bowl you went up ten fold in my book! It drives me nuts when I see chefs or bakers not scraping their bowls or pots. Maybe its the cheapskate in me but not scraping out every little bit just seems wasteful.

Sidney Armstrong and Misty Rose, both of you are my kind of cooks! I would not be commenting except for the fact that I was thinking the same thing through the entire video. I said to myself, "Blue Jean Chef did pretty good in scraping those bowls", BUT you haven't scrapped a bowl good until you scrape it like the Queen of Culinary, MARTHA STEWART!!😍😁 Now Martha know how to scrape a bowl and I've NEVER seen another chef do it as good OR as elegant as my Martha!!😂😂😂 Sounds like we are all members of the Clean Bowl Club and that's great! Why spend all the money and take all the time to put a fabulous dish on the table, and leave half of it in the bowl to be washed down the drain. LORD help-em'! Happy Cooking and Baking ladies. Thank you for sharing this. Greatly appreciate it. I am on an experiment with taking a lot of what you did and subtract sugar out of it. I want to replace that with Monin Syrup mixed with a double shot of espresso and make Espresso Tart. I already made an Affogato Flicita and that was tasty. Now ... time to add a tart to my list of tasty treats. I also may replace the Apricot for an ISI Whip Cream dispenser to add whip cream as a topping. Not sure yet. So much you can do with what you shared.

Hi. You could if you wanted to. Why not? It will be a different tart, but that's fine. Remember to put the pie filling in just before serving, however, because it will make the pastry soggy pretty quickly.
