That's not how Italian works. Maestri is just the the plural of maestro, both being masculine. Italian only has two grammatical genders, the Latin neuter gender having been absorbed into the masculine. There are certain words that share the same endings between the masculine and feminine, and words that are masculine in the singular but feminine in the plural, but those properties are specific to those words. So, like most Romance languages, if you want to use a word that has a masculine and feminine version, but you don't know the natural gender, it defaults to the masculine (or possibly whichever gender is most likely in context).
