I made it and it is perfect. I only used 1/2 cup of powered sugar in the whipped cream--for me this provided the more authentic less sweet taste.

Hi, usually they keep whipping cream or heavy whipping cream near the milk in grocery stores. They could be used interchangeably and I don’t think there’s that big of a difference between brands. By definition heavy whipping cream cannot be less than 36% milk fat, regular whipping cream is a little less - in the range of 30 to 35% milk fat. They will both work - obviously the heavy whipping cream will be slightly richer. Good luck. 🍻

Yes, it would not be the traditional Portuguese dessert but you could let your imagination run wild. Using mini types of cookies such as graham crackers, ginger snaps…

Usually xanthan gum is a good substitute for gelatin. Generally use half the amount of xanthan gum so for this recipe you would use about 1 1/4 teaspoons of xanthan gum. It does not need to be heated just slowly whip it into the evaporated milk. It will begin to thicken. Then add that to the whipped cream. 🍻
