Bombolini (Italian donuts with pastry cream)

These little Italian style donuts are the bomb! They are sometimes called Bombolini as they explode in your mouth like little bombs of delight. Filled with pastry cream taken to a higher level with the addition of mascarpone cheese. In this recipe, they are covered in sugar and cinnamon. Wait until you try one!
Other countries may have similar known as Berliner or Krapfen. Whatever you call them, you won’t stop at one so forget any diets and enjoy an explosion of delight in your palate.

Sunday, November 19, 2023 I felt very poorly with a terrible bug and I hadn't had an appetite for 2 days which is very unusual for me. Leaving church my Dad called me to see if there is anything I need and I asked if he wouldn't mind going to the Italian store and buying me a small cup of coffee and one of these delightful little round puffs but the ones without the cream. I was so content after I ate it and drank their very strong coffee. Years ago on Christmas morning my Mom made a similar pastry unfilled with cream just lightly dusted with powder sugar. Maybe this Christmas I will make them. It will be the 3rd Christmas without my Mom. This may be a good tradition to start up again. I enjoyed this video the photography was A+. Vanilla bean is always the best, but any natural vanilla extract works well too. For cream puffs I would leave out the mascarpone otherwise yes. Enjoy Melissa! 😀
