This is how I grew up eating hot pot - a bunch of friends hunched over a boiling pot of soup. I get so sad when I go to a hot pot restaurant and get served an individual serving of soup.

If it's with your colleagues/boss or just normal friends, definitely with a pair of shared chopsticks, or else it's rude and "unhygienic" (who knows where their mouth's been) It's also very common to have "cooked" and "uncooked" chopsticks to not let our eating chopsticks touch raw meat/food.

I worked for Taiwanese chef and had some language issues but sometimes I just understood. He was showing me how he wanted me to cut the chicken up and he tells and shows me " cut ah chicken like this make it longer , you understand the logic? ".

That's a small and very filled pot for a lot of people haha. But this is the hotpot experience (through the lens of Taiwan as seen through Asian American eyes) that I know and love. Shacha and soy is indeed the base of my sauce (plus... a raw egg...)
