Dogs pack bond with their humans and when they see you eating or cooking they want some too. my dog does it all the time and even the most well behaved dogs will "beg" for food by waiting patiently for you to give them a nibble or to drop something even if they have their own food right there in their bowl. Plus they talked about/showed notes on screen about how Utah would get a wing for positive reinforcement in his training. i bet the dogs might have even already gotten treats and were still hoping for more :)

love these episodes!! great way to show how a ethical hunt can turn into a responsible and wonderful way to provide food for your household. I wish people would understand that there is a huge disconnect between our food supply and ethical ways to get what you need without needless waste and mistreatment (nature and human workers). I just harvested a deer this season, and it will provide quality meat for a couple of families this winter. thank you for showing this Mr. Leone! keep up the great vids!

Chips N' Dip they will not feed them any of the bird meat, since they are hunting dogs you don’t want them to get the taste of bird. If they do they will chew on the bird before the retrieve it to you, but I’m sure they got a good dinner too!

I was trained in a kitchen. It's kinda funny I was trained in what I was told was Classical French food then had Parisians offended, tell me I'm really trained in Rural Québécois Pub food. This was the type of food it was. It was all fresh, all wild, why hire a guy to fly in salmon from up north or pay a guy to go hunting with his kid for pheasant when we could order from Sysco? Because it tasted better. We focused on using everything. The chef would say "the only thing we throw away is the oink." Simple, comforting, refined, hearty. Here's what you do with confit meat. Start with pub fries, those are russet fries with a little skin still on them and in the basket before you dunk them you add fresh thyme, fresh rosemary, red or sweet onion sliced, and a few garlic cloves. Dunk'em, Crisp'em. Take your confit and crisp it up in a ripping hot pan. Once it's crisp pull the meat off the bone and put it on top of the fries. Top it with a good homemade poultry gravy with a little allspice in it. Finally cheese curds and shards of good brie, and eat. You're welcome.

"classical frensh food"? Fries with chicken and gravy and cheese? Yeh that's "pub food", that's good, it may taste nice. But it's heavy, it's greasy, it lacks subtility. It's not a culinar experience, it's jsut great confort food. I see your point about quality of ingredients, but at the end you are hiding you ingredients with gravy cheese and oil.

I grew up in France in a strong hunting family and this video hits so much values I have a hard time finding where I live now, in Maine: using the entire bird, killing with a purpose and be grateful for what you have, showing respect for the animal by processing it as soon as possible, and the comment about the disconnect with food! So much yes! I am a firm believer that if ppl had to process the animal they eat at least once in their life, they would realize how much work goes into it and probably not take meat for granted as much as they do now. In any case, thank you so much for this video, it was awesome content!

Brad being a Native California and having a father who was an avid outdoorsman, he joined a pheasant club which gave us feeder raised, juvenile released ring necked pheasants who would turn into wild adults. We ended up with 12 pheasants on a 20 p card. The club would pluck and dress whole birds then vacuum pack them. My mom's recipe for prep is thus: 1 pheasant, rough chopped mirax poux, 2 to 3 cloves of crushed garlic, salt and pepper, herbs (parsley, sage, marjoram, etc), if you like spicy add crushed red peppers or chili seasoning, braising liquid (1 cup of chicken broth or stock, you can add a 1/4 of liquid smoke, OR a light beer works if your camping), through everything in a pot. Bring to boil, then simmer lid on for 45 mins. Check temp same as chicken. Of you want save liquid to make soup, gravy, or save for later by freezing. My mom always made hers in a microwave pressure cooker (by Viking brand). You can do the same with stove top or new hot pot version. Make sure you have enough liquid for these. And always when you serve and eat to be mindful of the shot! Enjoy!

For the longest time I didn't know what it was that drew me to Bon Apetite, but I've finally figured out.... it's the people. It's the people, the connection and human aspect to all of it. It's the beauty of success and the hopeless feeling of failure, and then the triumphant feeling of getting everything back under control. It's not the cookie cutter edited for tv "productivity" forward food network show. It's not people acting like everyone's family friend on BA. It's BA being BA and drawing friends naturally. It's edited and filtered but comes off as unfiltered and sincere culinary prep footage and I'm here for every single episode and every single person on staff.... Even... *DELANY* but especially Brad. I look forward to the future and hope that Bon Apetite can even further it's cultural reach and diversity to help us all learn how to cook for many different palettes of many different cultures around the world. ... As much as this hurt to watch (vegetarian) I totally agree with what Brad said. Understanding that you took this animals life and respecting it while preparing it is so important. That unfortunately does not happen when you buy meat from the grocery. Mad respect for you guys! Edit: of course taking a life is not “ethical” but it is far better than factory farmed meat. They are so incredibly thankful for the animal and the life it had and the life it will give, if you have to eat meat this is the most respectful way possible.

I don’t eat meat but these videos that Brad does where he goes hunting and cooking the fresh game is sooooooo satisfying! I don’t believe in factory farming but going out and hunting/catching your food is a beautiful thing (when done properly/humanly/in a non wasteful manner)
