Brad doesn't get enough credit for when he tells Claire to do something and he's right more often than not. He completely saved her Kit Kats, just as one example. He's just not around as often as Chris is, and he often plays the part of brutal critic pushing Claire to do better and letting her solve her problems, whereas Chris is usually trying to be more tactful and constructive. It's obvious Claire values both of them for their technical advice, at least up until Chris starts insisting she temper the chocolate.

She struggles like she's trying to figure out nuclear fusion when she's trying make noodle dough... or trying to figure out how to make dry noodles that will rehydrate (ie household pasta or household asian noodles - they are dried/dehydrated, not just fried obviously).... should these things be this complicated for someone with her supposed level of "expertise"? Sometimes being allergic to a lot of popular ingredients is expensive 🤷♂️. This is the one that seems the closest that I've seen anyways. Also this recipe seems to make a lot more than 1 packet so it's really not that bad.

definitely more than one packet - you could also just not reduce the stock and use it as is - like if you're making the noodles and broth flavoring fresh anyway, you can skip all the nonsense of folding the noodles and dehydrating them and just simple use the noodle and stock recipe to make some delicious ramen

@Yoo Jin So you're saying that any KZbin channel is only doing it for themselves and not to entertain people? Although some channels may think this, others do not. The whole reason of this series is to entertain us as viewers to see if a pastry chef can make gourmet foods. Even so, profit still has to be earned if your a full time KZbinr and you don't have a second job. I'm not saying that Claire or any other employee at BA doesn't have a different job, but it is very likely they only work at Bon Appetite, considering they are supposedly under a contract with them. Edit: I forgot to add at the end - of course she needs money if she works there full time. She obviously has to be payed somehow.

I've fallen in an immense like with Claire. She's so much more than a chef - her skill-set is such that she could probably create her own style or branch of cooking. If she opened her own restaurant, I 100% would go eat there. If she started her own cult, I would stop what I was doing and listen to the pitch. She should have her own show, like this one, where people keep her a little frazzled but in the end she accomplishes what she needs to do.

I watch both BA and Tasty, but what makes BA different is how everyone is a family and everyone is involved in the process. Tasty Is just one person in a professional set up. It's a whole company and a production. The BA kitchen is so warm and they just feel like family you've never met.

I was thinking just before that "you gotta cut one of those racks and interleave the spokes!" and was so happy when she finally went toward "okay, so I really need to take the end off this rack. How do I do that?". I had an idea though for how to more automatically get the weaving done. Drape the noodles over one rack, push the points of the modified rack up between the spokes of the draping rack, then angle those points down until the racks are parallel and the noodles are woven between.

Claire!!! "Adult Baby Food" is actually super useful for older adults who can't swallow properly and are on a pureed/thickened diet. And considering how most pureed foods ...are... in nursing homes (most patients I know hate it or are embarrassed by it) it'd be a *really* great idea to make that better/healthier/even gourmet, to bring the fun back into food for those people and give them a confidence boost!! It's a really great idea and I highly recommend considering that sort of product.

You know, that would be an interesting challenge. I could also see something like this, if you can get it reasonably shelf-stable, in the meal-replacement/workout-snack market. Depending on the texture and price-point, I could totally dig a savory "go-gurt" style pouch instead of a protein bar.

If I may add ,It would be great to also make ABF in everyday meals or things they can’t have much anymore like ,cheese cake or steak or fruit salad ,that would be like you said very heathy and also let’s them be able to taste what they couldn’t eat anymore now ,it would be the best idea ever omg And not just older elderly maybe it could be for adults who are always on the go or have diets like Keto that they need to watch what they eat or don’t want to spend money on the thing they want to eat when they could just buy a jar of it ,honestly the possibilities are endless lol

My grandpa was on this diet for a while in the nursing home. He had a few seizures through out the past five years and last year they discovered he had also had a mini stroke. He hated the food in the nursing home and just the fact that you brought this up makes me happy that you are thinking of these people. My grandpa passed away January of this year but we lost him long before that after he had that first seizure many years ago. I watched my mom feed him in the nursing home and wished nothing more than for something to bring him joy again. Thank you again for bringing this up, I hope someone acts upon it so that older people can enjoy their lives like they did before when they had better health. ❤️

This honestly might be the best episode of gourmet makes. She actually made the product better, instead of trying to make a replica. The only thing missing is Brad, but he was at least mentioned. Also, his absence may have been better for Claire because he often comes with many complaints. I know i'm late with this comment but I felt I needed to express the greatness of this!

This is awesome. Very akin to the process of scientist in a lab, trying to figure out how to make something work. it’s frustrating, it takes forever, you try it a million times, people chime in with knowledge and help. 8 hrs of this in a science lab, everyday. that’s my life, except we can’t eat final product .

thank you for noting that MSG gets a bad rap! MSG is only a problem if you have a notable sensitivity but it adds so much depth of flavor.

So true. And this also had MSG in it. The 2% yeast extract is how they add undercover msg. We know they did because Disodium Guanylate is only added along with msg. Many products are labeled with sneaky using MSG names. If you think it probably has MSG in it, then it most likely does unless the company makes a point of saying NO MSG on the label. Even health foods can have it. I'm one of the msg sensitive ppl out there, so while it's not a problem for most of the world, some do have to watch out for it or we can even go into Tachycardia.

Yeah, unless you have an allergy it is fine. Most of the studies were founded on racism since it was at first mainly in Chinese food in Chinese restaurants so the evidence is biased. So unless you have an alllergy or sensitivity (like anyone can have to basically anything) its perfectly fine to use
