The tracking on some of those is insane as well. Was goofing around with cheat-engine for fun in DS3, and Iudex Gundyr was already bonkers. His delayed overhead-slam with his halberd. I set enemy speed to 25% and during the wind-up for the move, I ran circles around him. Motherhubber was zero'd in on me the whole goddamn time.

False King Allan, The Penetrator, Artorias, Gwyn, Fume Knight, Sir Alonne, Ivory King, Lost SInner, Champ Gundyr, Gael, Pontiff Sulyvahn, Sister Friede, Abyss Watchers, Soul of Cinder, Nameless King, Dragonslayer Armour, Lady Maria, Gerhman, Father Gascoigne, Orphan of Kos, most of Sekiro bosses, and many Elden ring bosses..but then we also have like Dragonrider or Deacons.. Big bosses with some exception are probably dragons, because many of their fights are epic and quite challenging, also Ludwig because he is awesome, but then you have things like diarrhea tree or bed of chaos..

Yep, cause it really subverts your expectation which is obviously great boss design. You don't wanna reward the player for learning anything prior to the second phase, you wanna punish them for it and then they'll just have to trial and error their way to memorise the new attack patterns. The game series way of doing difficulty is hella overrated.
