Oh my goodness. That 50mm was almost sharp enough to smell the food! The scene with the shrimp over charcoal totally sold me on the Parrains.... and even though the steak searing sequence was in slow-mo, i still watched it 4 times. Great vid, thanks!

Thanks so much Phil and yes sir, that marbling was insane! I honestly think this American wagyu is the way to go. Some of the 100% Japanese wagyu is so intensely marble with fat, that I think it would be so rich, you could only eat a small portion, so this one, I can eat more of LOL!

For the steak sauce, a great alternative is replacing the Bourbon or Whiskey for Cognac. One of my personal favorite recipes with a phenomenal flavor, cream & cognac are a powerful combo. I never thought about trying a Bourbon, looking forward to that and your take on shrimp! Excellent recipe!

Thanks so much for the awesome comments Paivi and thank you for checking the video out! I could seriously hurt myself eating this! Amazing stuff. I read your other comment and wow! I guess them like many other restaurants do, lose their touch after a while. It was quite a few years ago since I've eaten there and that was the only thing I had, but it has stuck out in my mind every since then, but in all honesty, this is better. I just didn't know it could get better back then LOL. Yeah, I'm really liking the looks of these new cameras and lenses. I've pretty much retired my Canons, but I do still have them in case.

I do the exact same way with my porterhouse steaks in terms of a reverse sear. I do a fast cook directly over mature coals (about halfway through their burn) and get a good crust going on rare meat, then drizzle olive oil over the top until it drips over the sides and flares the coals and fries that crust in good. I do both sides about maybe 2 minutes a side then pull em and let rest 5-10 minutes (however long to whip out a salad and/or plate up some asparagus or brussels sprouts. Perfect blood-rare the way the wife and I like em! I am so glad we like our food the same way and the same things (except that satan-spunk nasty cottage cheese)...

Great video Russ; sorry if I missed this, but what is the semi-circle stainless tray that you are using under the steak and shrimp? Is that Kamado Joe brand? Also. what is the diameter of it (if you don't mind)? I am wondering if that will fit on my Blaze kamado. I am doing ribeyes this week and wanted to try something different; this sounds just right. As always, your video is "Coonass" approved (at least from this one); thank you, sir.

Nice video I would use a higher smoke point oil for the sear however. Olive oil's smoke point is 410 degrees F. 99 out of 100 great looking meal!

Actually extra virgin olive oil's smoke temp is between 350 to 375, but no oil out there can withstand the intense heat of screaming hot charcoal right below it. It basically just turns to char and I assure you there is no off putting flavor from using olive oil. It's all I ever use as well as many people and I will continue to do so. I appreciate you watching the video but if you could have tasted this steak, I'm pretty certain you would have to agree that the olive oil had no negative influence on the flavor whatsoever.
