Thanks so much Phil and yes sir, that marbling was insane! I honestly think this American wagyu is the way to go. Some of the 100% Japanese wagyu is so intensely marble with fat, that I think it would be so rich, you could only eat a small portion, so this one, I can eat more of LOL!

I do the exact same way with my porterhouse steaks in terms of a reverse sear. I do a fast cook directly over mature coals (about halfway through their burn) and get a good crust going on rare meat, then drizzle olive oil over the top until it drips over the sides and flares the coals and fries that crust in good. I do both sides about maybe 2 minutes a side then pull em and let rest 5-10 minutes (however long to whip out a salad and/or plate up some asparagus or brussels sprouts. Perfect blood-rare the way the wife and I like em! I am so glad we like our food the same way and the same things (except that satan-spunk nasty cottage cheese)...

Great video Russ; sorry if I missed this, but what is the semi-circle stainless tray that you are using under the steak and shrimp? Is that Kamado Joe brand? Also. what is the diameter of it (if you don't mind)? I am wondering if that will fit on my Blaze kamado. I am doing ribeyes this week and wanted to try something different; this sounds just right. As always, your video is "Coonass" approved (at least from this one); thank you, sir.

Nice video I would use a higher smoke point oil for the sear however. Olive oil's smoke point is 410 degrees F. 99 out of 100 great looking meal!
@SmokyRibsBBQ5 жыл бұрын
Actually extra virgin olive oil's smoke temp is between 350 to 375, but no oil out there can withstand the intense heat of screaming hot charcoal right below it. It basically just turns to char and I assure you there is no off putting flavor from using olive oil. It's all I ever use as well as many people and I will continue to do so. I appreciate you watching the video but if you could have tasted this steak, I'm pretty certain you would have to agree that the olive oil had no negative influence on the flavor whatsoever.
