In this episode I share steak basics with Braai & BBQ Lovers the world over. I also share a story where we met an angel on the road.
Mushroom & Brandy Sauce Recipe:
10ml melted butter or olive oil
1 Onion Finely chopped
1 teaspoon crushed garlic
250 gram sliced preferably forest or porcini mushrooms (alternatively white or black, less taste) mushrooms.
250ml cream
60ml brandy
Salt and black pepper to taste
Method:
Fry onion and garlic in butter until soft over a medium high heat. Once onion is soft add the cream and brandy and mix. Reduce temperature to medium/low so the sauce will reduce and thicken. When desired thickness is achieved, add salt and crushed black pepper to taste. Delicious!!!

Great content, love the stories too. Adding salt on before the time dehydrates the meat and make it lose moisture. Best way to do it is to salt just before coming off or whist resting. Keep up the good work. CEO @ Gourmet Grills Cpt

I would salt after braaiing to avoid drying the meat during braaiing

i allways learned that one should not turn the steak with a fork . does it matter in any way ?

Hello Mark. This is a great question. I normally turn with tongs, but if all that I have is a fork, I will normally stick it as close as possible to the side or edge of the steak, as I dot not want to push holes into the middle. In this case I normally also try to turn with the fork by making as little as possible contact with the steak by nit pushing the fork in too deeply.
