So for instance, let's say you put a small amount of a certain spice or herb in a dish, it's only meant to give a subtle, hint of flavor, but I can't pinpoint what it is or if it's even in there. He could tell that it's there AND tell you what it is. I want to be a chef, but my pallete sucks (at least I think so).

I had that once while eating a Shrimp ceviche here in Sinaloa by a local shrimp farmers wife, messed me up cause I knew it only had a serrano chilies and limon Colima (a kind of lime) blend sauce, salt and devained shrimps.. but it was a beautiful thing. Haven’t been able to replicate it
