when you heat the milk at first, the whey proteins denature which will contribute to making the yoghurt firmer! that’s why you boil the milk even though it’s already pausterized 😊

Maddie Goss pasteurization happens at a lower temperature for a short amount of time, and isn’t enough heat to sufficiently denature the whey proteins for yoghurt 😊

So I don't know if Priya is Gujarati but I kinda have an idea why her mom would make up the word 'chuck' for yogurt (dahi in Hindi/ Gujarati). Becuase in Gujarati the word to describe really set yogurt that when you scoop out comes with clear iceberg-like ridge is described as 'chukka/chukko dahi' . I guess 'chuck' is just a shortened American-ised version of 'chakka/chakko' :D

My exgf's grandmother snuck a small jar of yogurt starter in her purse when she emigrated to Canada from India. She had heard that Canadians seemed to tolerate really crappy yogurt and that was not something she was prepared to do. I tried some and yes it tastes better. Their yogurt culture is going on five decades.

Buy a single serve of a good plain unsweetened yogurt, like Sigi's. Use 1-2 Tbs as a starter. Then save some of your yogurt for the next batch. I strain out about 40% of the volume of whey (use a coffee filter lined strainer) to make a thick Greek style yogurt. You can use the whey as starter, even better than using the good thick yogurt you want to eat. Also, my dogs love to have a drink of the whey!

Heating the milk as the 1st step does 3 big things (that I'm aware of) it changes the structure of the protien so that it holds together better and holds more of the whey ... IE so your yogurt is thicker ... so you can strain or cook with it easier (it *can* separate to grainy liquid when heated as yogurt) And... It stops the progression of enzymes in the milk that could spoil the milk And.... It kills bacteria present that may compete with the cultures you want in the yogurt You chill yogurt before you dip into/cut/eat because the protien matrix stabilizes and it gels better (if your straining your yogurt this mean you strain off less white protien liquid... You get a 'cleaner strain')

Boiling the milk denatures the proteins which makes them easier for the culture to digest!

Traditionally, the milk isn't boiled, just brought right to the edge of boiling. And it was done to sterilize the milk for thousands of years before pasteurization. Also, if there is a difference in how the yogurt comes out between boiled and not, it's not really noticeable in the final product. And, bacteria don't eat protein. They eat sugars. So denaturing the proteins don't help with them eating.

@@ArunaKhudan I have no doubt that for some people that is absolutely the case. And for others, I also don't doubt that it's the exact opposite, the not boiled does better than the boiled. It's just not one of those things where if you do this, then it does this at the end. It all depends on the person, and exactly what they're doing throughout the whole process. Just like in the video, they followed her father's instructions, and it came out kinda watery, but his comes out thick. Me, I don't really have a technique, I'm usually doing several other things at the same time I'm messing around with yogurt. So that could be why I don't see the benefits of heating the milk to boilng the way you do. but you should be able to tinker around with everything and get it to where you don't need to boil it. But no need to, if it's working for you, and it ain't killing you, you're doing good.
