It's interesting that you find it to be a "horror". Do you eat meat at all? And yes, that's a large ratio. Normally there's more egg or, rather, a more equal amount of brain to egg ratio.

This used to be a common working-class dish in my country (Czech Rep.) until the last change or regime when meat became more accessible. At home, we still make a poor man's version of this with cauliflower and the addition of browned onion, to be served with potatoes and ketchup/tartar sauce (obviously not for breakfast). It's a great meal for hard times :)

JazzyJackie I also find the brain a beautiful organ. Along with the heart, uterus, and lungs. I'm studying to be a trauma surgeon and the organs are just something I'm fascinated by. As I said in my comment, I would love to get my hands on a pig's brain to dissect and locate every important part. A cow heart also. But here in west michigan I haven't seen them. Only see blood, intestines, livers, and chicken feet

I am 59 now. I also grew up eating calf brains with scrambled eggs. They were soft, buttery and delicious. They were delicious. My parents were born in Europe. I also loved heart and lung stew (not sure which animal). Lung was banned after awhile though so mom made it with heart only. I think we eat what we we were used to. Both my parents liked what they were used to, but they liked to try making new recipes at home too. We ate internationally, from what I remember. This included recipes from Japan, Phillipines, Russia, S. America, England, Spain and more.

My grandfather loved pork brain & eggs. We are from the south and my grandparents used to raise hogs for food. Whenever they slaughtered one, they would save the brains for my grandfather’s breakfast the next day. Thanks for creating and sharing this because I always wondered how that was prepared and what it looked like. Perhaps one day I’ll try it, if the opportunity crosses my path. 🤔

My mother use to fix this every Sunday morning. It was a special meal her grandmother served every Sunday brunch. It isn't a poor man's dish, it was a high class meal. It's more common in the south. My father was a hunter, raised on a farm, & brought home everything to eat. Being in Louisiana, this was really everything!
