I always weed them out of my garden but the more they grow, one day I told mr husband maybe God is trying to tell us something why we cannot get rid of these weeds. Now I just discovered that they are very nutritious. Thanks for taking time out of your busy schedule to make this video. I really appreciate you and all the others who take time to do these videos and thanks to KZbin for the convenience.

All greens are also good with a dash of apple cider vinegar.. The vinegar adds vitamins, flavor, minerals and aids digestion.. Don't forget all of the nutrients in that water.. You can use it in soups, stews, sauces, gravies, breads and drink it as a tea..

I'm making them now - but I collect the 6 inches and below size of the greens & I sautéed them in 1 Cup of water until they cooked all the water disappears and the greens release their mineral. Then I add olive oil and sautéed them with garlic and salt. Finishing touch --- I rehydrate them with lim juice :)

Great recipe. I like to retain some of the bitterness as it seems to help the gut. I prefer dandelion greens to pretty much any others for sautéed greens. It is also the cheapest at grocery stores as far as I know. I prepare dandelion with oyster mushrooms, garlic, and some sort of meat like sausage or spam. I’m going to use olive oil instead of butter next time. Thanks for the video.

Ingrid DeHart Ingrid Dehart Hi Ingrid, While Dandelions are great for kidneys, but by throwing away the water after blanching you are throwing literally almost all good stuff ( because they are water soluble ) That's why in our homes, we blanch by themselves in low flame, in their own water before coating and sizzling with seasoned garlic oil etc...So that none of the goodness goes to drain. and dont forget, the bitterness that you are trying to get rid of , "Itself" is the kidney healing component. I am just starting to realize, how accurate traditional recipes are. Hope u change your recipe and adopt this step to have maximum benefit.

This reminds me of simpler times, when I was a youngster, I'd see an Italian lady in our front yard every year and she would harvest our dandelion leaves. It's taken me decades to learn that something that society considers to be highly undesirable is on the contrary incredibly healthy.

You can save the water and use in soups. Most people find the dandelions greens too bitter to eat raw or even light sauteed. It's better to enjoy your food even if has fewer nutrients than to eat something you don't like and then never eat it again.
