Yes you can. Mix it with a spoon or put the dry ingredients on a table, make a well in the middle and put the wet ingredients in. As you stir mix in a little bit more flour each time like you saw in the video then knead it by hand until it changes. It will become nice and elastic. Plenty of videos online if you're not sure how to knead bread. I like making mine by hand because the kneading is relaxing.

No you can keep the dough overnight in the fridge and then follow the procedure and bake.
