I just stopped to pray for you when I read this comment. The small packets of yeast have 2 1/4 teaspoons in it. I usually see the packets sold as a 3 pack, and are not very expensive. You only need 1 teaspoon of yeast so you can get 7 loaves of bread from just buying the 3 pack. I looked it up on Walmart just to see a price and the Walmart brand yeast is $1.14 for the 3 count packet.

Let rise same as your recipe however when you get it out to knead it just fold in about a 1\2 cup rehydrated raisins. Hi Sandy….I mill my own wheat also…which wheat berries and how much would you use for this recipe please? Thank you!
@sandysteinbrook2 ай бұрын
Use hard white wheat berries for this recipe...As far as how much, add the 3 cups like the recipe, but I had to add more. didn't measure, but I would say I used another half cup. What you are looking for is a sticky consistency, not wet. If you only use 3 cups, it will be wet still. Then when you go to make the loaf, if it is still too sticky, just add a little more flour on the surface while your working the dough so that your hands aren't completely stuck to it. I usually make this as a round loaf in the dutch oven like I did the white bread in the video. It will never be as big of a rise, but it's packed full of nutrition.

So, I know that you can make soft loaves in a bread machine, but I am not sure about a crusty bread. I use a different recipe for my soft loaves. Although I was reading an article about bread and someone from France said Americans make cake instead of bread by adding all the oils and sugars. She is right. Bread is supposed to be flour, yeast, salt and water.

What temperature?
@sandysteinbrook2 ай бұрын
Im not sure if you're asking the temperature of the water or the oven. For the water it just needs to be warm to touch. Not hot or cold. It sits on the counter for plenty of time for the yeast to develop, so it doesn't need to be hot. As far as the oven temperature, I cook my crusty bread at 450 degrees for 30 minutes and then remove the lid and bake another 15 minutes.

@sandysteinbrook2 ай бұрын
I use fresh milled flour that I make from wheat berries. I use the same recipe but always have to add more flour than 3 cups. At least 3 1/2 cups. Or more if it is a wet dough. I want the dough to be sticky, not wet. once it is sticky, I do the exact same thing I do with the white bread in this video. I bake it in the dutch oven normally but put it in the loaf pan int this video to show how to use a loaf pan also.

How long does a loaf last before it goes bad?
@sandysteinbrook2 ай бұрын
Definitely not as long as store bought bread can sit on the shelf. I am not really sure exactly how many days. What I do is after we eat what we want for dinner, I keep a few slices in the pantry for the next few days but any left over after that, I put in the freezer. Then I can just take out a slice and have a piece of toast anytime and not worry about it going bad.
