after you pour the chocolate, they just pull out that easy? is it a special mold do you have to treat the inside of the mold with anything? ty!

After the molds are filled with melted and tempered pure chocolate, you our out the excess then place them in the refrigerator until the chocolate hardens. As chocolate hardens, it retracts (shrinks) from the mold just slightly. If your chocolate is tempered properly the eggs will slide right out of the mold. You should not treat the inside of the mold with oil or spray. If your chocolate doesn't come out easy, chill it longer. If it still won't come out easy, it's not in temper. See the blog post for tempering instructions - hungryhappenings.com/breakable-chocolate-easter-eggs/ You can also use compound chocolate (also knowns as confectionery coating, candy melts, melting wafers, or almond bark to make these chocolate eggs. Compound chocolate does not contain cocoa butter like pure chocolate and does not need to be tempered. You simply melt it and pour it into the egg mold then dump out the excess. You'll want to harden this chocolate in the freezer. Once again, the chocolate will retract as it hardens and should come right out of the mold.
