I’m going to try the tortellini salad and the breakfast cookies. Your recipe is a bit different from another one I’ve seen. To thicken up the batter, you can add some Hemp Hearts instead of more oats. The hemp hearts are a great source of protein. I only use the old fashioned/large flake oatmeal because it is lower on the glycemic index and is a better source of fibre than the instant or quick oats.

Toss your blueberries in a little flour before you add to mix, it helps prevents the blue color. Works for muffins too.

Grandma taught me to do that all dense little things added to a batter or even a dough. She said the flour made a surrounding of air, to keep things toward the top for a while. I think the little bit of extra sticky goo from the flour probably helps, too! ❤🙏🏻❤🙏🏻❤ Beth

@@eer4465 yep, grandparents both bakers and always covered raisins, cherries, dates etc in flour helps to slow down the sinking. Never know whether it's an old tale of true though.

Love spending time with you Becky. You are a true inspiration. After my son died by suicide in 2015, I lost interest in everything, cooking was such a hassle. I couldn't deal with the grief, and be creative in cooking, but watching your enthusiasm, has me interested in cooking again. God bless you and Josh. Lots of love from South Africa ♥️

I don’t know when this was filmed or if someone has commented this, but for the most part it is recommended to stay away from raspberry leaf tea in your first trimester and limit it in your second. Also it can help strengthen your uterine walls in late pregnancy and potentially reduce labor time! Love the video!

I was given raspberry leaf tea in my third trimester by my midwife. It helps soften the cervix, to make labor easier. Definitely not something you want the first 7 months.

Oh also I wanted to tell her to please get a strong iodine to start taking. And to read up on the effects of iodine deficiency during pregnancy. Extremely important. Lack of it strips whatever little bit you may have from food to give to baby. And almost all of the u.s. is extremely iodine deficient. It would greatly benefit you to add seaweed to your garden soils, as well as rock dust to ensure your produce as all macro and micro nutrients

As an older single seasoned woman as people tell me not to call myself old...lol...its very difficult to cook for one. I loved what you did because these meals can carry me over a few days and I can still be healthy in my eating habits. When my sister and her son moved out a few months ago to Alabama, I've reverted back to bad eating habits. 😒 I'm growing my own vegetable garden buy haven't yielded anything yet but I knew it would possibly be a bust this year. I haven't garden in over 30 years. But I'm willing to relearn these important skills. I love seeing your cooking videos on your harvest because it gives me hope that I too can do this. The Scratch Pantry is just a plus and I don't have to take photos of recipes...now I can actually take my time and write everything down in recipe cards or a book. Love love love your channel.

I cook for one too. It's different, not exactly harder. What I do is prep a lot of ingredients at once, freeze in portions and then throw together something from a few premade ingredients. For instance, buy a few pounds of onions, chop them up and brown them. Freeze in ice molds. When you are cooking you just throw one to defrost in the food. No peeling, chopping and waiting for it to brown. I do the same with meats - pre cook, pre portion and freeze. So I boil some pasta, defrost some meat and onions in the glass bowl I am eating from in the microwave. Add some tomato sauce, the pasta, some seasonings. There, a good, healthy, filling meal in under ten minutes with minimal mess.

I totally would have used those avocados. Everything looks so good. I'll definitely have to try these recipes. I think adding artichoke hearts to that tortellini salad would also be so delicious!

I was happy to see your comment. I thought perhaps I had used “bad” avocado in the past 🤣 I’d use it especially for guacamole. Maybe because in this salad the dark spots they would be more visible and off-putting.

Becky here is a recipe from my mother who's from Chile. The best summer drink you've ever had...I kid you NOT! 1/2 gallon apricot nectar - 2 ltr 1/2 gallon ginger ale - 2 ltr 1/2 gallon 7up - 2 ltr 1 pkg of frozen strawberries in syrup, blended smooth. You can strain the seeds out but I like them in. You can also make your own strawberry part. Just macerate them in sugar and freeze them for the right texture. About 2-3 cups worth. Ice.

@@monicas2461 It doesn't really have a name that I'm aware of. My mother used to make it before she passed at 83 and her mother taught her. My mom's name was Carmen so I guess 'Carmen's Elixir' is as god a name as any...but you can call it whatever you like. Please give it a try, I promise it's amazing!

This sounds delicious! It reminds me of a punch I had growing up that was always at the church Christmas party after the kids' play/program. 😄 It was red Hawaiian punch and ginger ale, with the sliced strawberries just put on the bottom of the bowl as a frozen brick! Lol Then the liquids were poured over top (and they started to soften and break up the strawberries), then rainbow sherbet was scooped over the top of the bowl.

Boil-reducing a bunch of lemon juice all at once has totally changed my approach to desserts and "accessory" foods. Scones? lemon glaze is in the fridge. Roasted garlic butter? Add honey and lemon glaze. Lemonade concentrate, meat marinades, salad dressings, anything you want to squeeze a little lemon on top of you can pull some reduced juice out and not waste half a lemon forgotten in the back of the fridge.

@@alexishodgson7624 either buy a big ol lemon juice bottle or squeeze an assload of lemons, put that juice in a pot and boil it for “a long time” (read: until it’s as thick as you want it to be) i’ve stored mine in mason jars (thinner) or ziploc bags (closer to a gel texture. very reduced). takes a while, gotta stir it a lot so it doesn’t burn, but it’s super good imo

Loved each of the recipes but let me just say I'm so tickled that you are pregnant. I was so happy and even at 76 I felt like it was someone in my family announcing the good news. Children are so important and you'll make a fabulous Mom as will Josh be a great Dad. Don't slow down, stop doing what you like and just do things when you feel you can. I can just see you now........weeding with a beautiful dark haired baby on your back in one of those nice backpack thingys they have now. Oh, I'm so excited!!!!!

I've been home with Covid and yesterday when you posted about the baby I called my husband at work. I covid screamed "Becky's pregnant!" He of course had no idea who I was referring to. "Acre homestead! Freezer meals! Baked oatmeal! She's pregnant! 😁😁😁". I e enjoyed watching your videos and I'm totally invested. I can't wait to see baby bump updates and more freezer meal cooking! Thank you for sharing your life in such a genuine way! Ps : you mis speak and make messes because of your dyslexia. And I LOVE it! My husband and daughter both have severe dyslexia. They are amazing. Becky you can easily make peanut butter in your vitamix too! It takes 2 minutes and I use 3/4 plain dry roasted and 1/5 honey roasted just to give a hint of sweetness. I know you’re busy now but once you get settled in the new place give nut butters a try. It’s so easy!

When your avocados are starting to get soft put them in the refrigerator. They will stay exactly perfect for at least a week.

Wrap them in moist paper towels - not in a bag - so the skin won't dry out.

Oops! Just thought of another idea. Times are tough for everyone, especially senior citizens who are caught in a financial squeeze. If you can locate someone who could use a helping hand with food, you might strike up a deal where that person comes, say, once or twice a week for a couple of hours to help you harvest your bounty in exchange for a large bag of your fresh produce. Later on, if that person is a good enough assistant, she could come once every week or two and help replenish your freezer meals in exchange for taking one of each back to her apartment. Ask around at churches, senior centers, etc. to find someone and make an exciting friend in the process.

I can’t wait to see you cooking and gardening with your baby. For me, garden to stove was tomato soup and cucumber tuna boats for lunch. My grandsons come twice a week and we bake and garden. It is so fun when they are wide eyed looking for treasures ( cucumbers). They get plastic serrated knives to cut with.

@@marywalker2896 half the cucumber lengthwise. Scrape out seeds. Add tuna salad, cottage cheese and fermented veggies. I had asparagus and green beans.

I get my avocados too hard to use, cut them into cubes and freeze them on a sheet tray. The freezing softens them and I don’t lose them when they go too far

oh no! those avocados still looked good! I'm sure you're chickens enjoyed that. I used to throw so many avocados until I realized most of the "bad" or discolored areas can be taken off and you can use the rest.

Be careful with raspberry leaf tea.. here in the UK it's not recommended until 32 weeks as it can stimulate the uterine muscles.. I don't know what the guidelines are in America xx

Everything looks yummy. I use the discolored avocados. They don't look pretty but really don't affect the taste. Just what I do. That salad looks beyond yummy!!!!!! Take care of yourself!! :) God's blessings.

I read just because they turn brown it does not mean they are bad. I use mine when they are discolored. Too expensive in Missouri

Becky, you can buy avocados and preserve them in the freezer by smashing them with a bit of lemon juice, then separate them in different ziploc bags for further use. When you need them just put them some time on the counter top to defreeze. 🥰🥰

For future you can make quick oats by putting regular oats in the food processor for a little bit. This way you never have to go to the store to just buy them.

Add avocados to cowboy caviar only when serving. The rest will stay fantastic in the fridge for a week or more. It’s actually better after it sits a bit. Never rinse pasta, it stops cooking when you remove it from the boiling water. The starch helps hold the dressing on the pasta. A larger pot and more water for making pasta will give your pasta a better texture when cooked and prevent boil-overs.

Please go easy on raspberry leaf tea during your early stage of pregnancy. Guidelines say no more than 1 cup of raspberry leaf tea a day. Its fine later on in pregnancy, and can help with labour (and during menstrual cycles).

Quick tip.. rinse your frozen blueberries gently in cold water until the water runs almost clear. dry them off on a paper towel and then gently add them to the flour mixture and give them a stir to coat... add wet ingredients and gently fold... :)

Since they are supposed to be a breakfast cookie, that is why nuts seeds and dried fruit is supposed to be use. So they are more nutritious.

Hey Becky the avocados are still good. You can spoon out the areas that have the black blemishes on them. If the whole avocado is black or grey you can given them to the chickens. Just want you to know that so you don't have to toss all of them to the chickens. I've been eating avocados since I was a toddler and that's what we did in hotter weather

Be careful with red raspberry leaf tea early in your pregnancy. It's great to drink in small quantities later into your second trimester and even more in your third trimester. But early on it can cause contractions when you don't want them to be happening. I just had my baby this past weekend and I was a week past my due date but I was drinking 2 to 3 cups of red raspberry leaf tea leading up to the delivery. I had my baby within 17 minutes of getting to the hospital so it was a very quick birth! I think the tea helped a lot.

You mentioned that you were going to give the avocados to your chickens. Avocado skin and pits are toxic to chickens. The flesh is ok for them. I am always amazed at how much you accomplish in a day. You inspire me! Congrats on the baby!

I find fresh blueberries don’t bleed as much as the frozen. When I started making scones (donkey years ago!😉) I used dried blueberries and it’s still my favorite way to make my blueberry and lemon scones. I love to make a bunch of scone dough and freeze it. You can even cut them into the wedges and freeze those so if you want to bake off just a few or half the recipe, you can. We tend to not eat them fast enough so this works great for us. My favorite is probably cranberry-orange but my son’s favorite is maple pecan- that one is super yummy. ALL good cooks try the cookie dough.😉 hahaha The genuineness you show is refreshing and appreciated. I hope you, Josh and the wee one are all doing well. Take care.

URGENT.... Raspberry leaves are traditionally used to start labour..... Please always check with your physician before adding things to your diet. I am crying while you are cutting the lemons. The zest can be harvested before you cut them, but after you have rolled them. Just put the zest on a plate spread thinly and they dry overnight in the cupboard. It is free flavour. I adore seeing you 'nesting'. I love the idea for the breakfast cookies. One thing I may add if you don't mind is you can make both a savoury and a sweet monkey bread. Prep it before freezing and then thaw, proof and bake.... YUMMY and it is a complete meal for dinner or the next day. Keep cool. Hugs from Esquimalt

A great use for your blueberries is to mix them in some homemade yogurt and freeze them either in ice cube trays or little paper cups. They make amazing dog treats in the summer heat ☀️🐶

I love to buy the marinated mozzarella balls and I used the seasoned oil left in the container as the base for the dressing to go with it! I just add red wine vinegar and salt. So good!

Good job! It can be really exhausting to do large projects while pregnant, so please make sure to pace yourself! It can be hard to remember that your body is already working super hard when you haven’t done anything in your day yet, I definitely recommend getting on of the pregnancy tracker apps, they have ones that tell you what organs are being made that week and they are so FASCINATING! God made our bodies incredible! Also: you look so incredibly happy and I am so incredibly happy for you!

Becky, have you ever tried making your own peanut butter? It is so easy! Put 2 cups of the peanuts of your choice in your food processor and process it until it is the consistency that you like. It will go into a ball and then it will liquefy. You could use honey roasted peanuts and get that little bit of sweet that a lot of people like. This will make about one cup.

Those breakfast cookies look delicious. A tip for your scones - rub the butter into the flour until it resembles breadcrumbs then add your wet ingredients. It's easier to form the dough that way

So many delicious ideas and top tips for meal prepping! I know you said the bowls were a gift, but do you know what kind they are? The lids looked exceptional in terms of a strong seal. Also, thank you for the variety! I like these smaller weekend prep day videos because it’s a scale of prep I’m more likely to be able to manage. Final thought, I’ve heard raspberry leaf tea has a mixed track record/ reputation for people who are pregnant. Of course if you’re comfortable drinking it you totally should do what you like, but just wanted to let you know so you can be aware of/ look into the potential risks if you’d like.

was looking to see if anybody else mentioned the raspberry leaf tea! it was something that was suggested to me in late pregnancy but everything i looked in to said to limit use during earlier pregnancy. it's on many lists about inducing or helping with labor.

Great video, loved the salads! Something great to have in the freezer is citrus zest. Everytime I use the juice of any citrus fruit in a recipe, I first wash and zest it. I keep it in the freezer either in ziplock bags or in glass jars. Peel strips are great for drinks/teas and the grated zest is great for baked goods, stews and pasta sauces.
