In this video, I show you how to make and cook your own breakfast meat without any frills.
It tastes super delicious on bread, on rolls or briefly fried with a salad.
In this video I use curing salt, which is used to redden the meat. You can also replace the curing salt with other salt, then the color of the meat will be more greyish.
You can use rock salt, ancient salt or sea salt, for example. I always make sure that it does not contain any iodine, release agents or silica aids. These additives can affect the taste of the food.
Ingredients:
1kg minced pork
26g gelatine (Bloom 150)
180ml cold water
2 teaspoons vegetable oil
175g onions, diced
15g pickling salt with 0.4-0.5% nitrite
2.5g pepper, ground
1g nutmeg, ground
10g mustard flour or mustard seeds, freshly ground
5-6 glasses 370ml
