Racetrack Gas station. If you dont get it fresh though, The biscuit gets pretty hard in the wax wrap. Always love a good sausage biscuit to start the day. Such a filling meal on an empty stomach with all the right flavors to be a great vibe right when the suns rising. I also never considered doing the eggs like that, Jammy rich yolk but not becoming an absolute mess

This reminded me of making sausages with my family as a kid. We'd make the sausage filling, put them in casings, and cure them in oil. And we'd always fry up the meat to make sure it tasted how it was suppose to. But we stopped as my grandparents got into their 80s and it became too much for them. No one else had the space at their homes. Same with making and jarring our own tomatoes, and homemade wine and grappa. I miss a lot of those traditions.

I made the sausage patties (had to omit the fennel), and they turned out really good! I formed the patties onto wax paper, stacked them, and froze them in a gallon bag and it worked really well. I made about 12~ with the amounts directed. I wrote this recipe down in our recipe cards to come back to because it’s really easy breakfast prep and you can have the sausage stand alone and it’s still really good 💕

Cafe Duet, Stroudsburg PA. Two organic eggs, split and grilled Spanish chorizo, sharp cheddar cheese and baby arugula on a fresh baked roll w/ a touch of sriracha mayo. Best I've had of late, besides my own. Claires looks absolutely amazing!! Breakfast sandwiches are probably my favorite food group.

I haven't watched you since BA. Randomly found you again and I'm glad. Fav. Breakfast sandwich is a local coffee shop. Everything bagel, scrambled eg real thin folded to make a pocket of cheese (blend of cheddar and swiss??) and bacon and add a siracha but choose a sauce of your choice.

Great video! To eliminate the guess work when cooking english muffins in a pan or griddle: Check the griddle temp with an IR temp gun, look for 350-400F Cook dough 5 mins on each side Test for doneness if you must with a small internal temermometer, look for (190F/88C) Optional: pat sticky dough in a plate of cornmeal to avoid the need for parchment

Claire! Thank you for the tip about adding bacon to the mix! I always make my own breakfast sausage, and one of my favorite uses is to make a hearty sausage gravy. I always add bacon to the saucepan, along with extra sage, black pepper and maple syrup. I hadn't thought to boost the sausage with bacon at the start! Really appreciate the tip. Going to put it into practice tonight!

In Aus we would probably call this sausage patty a rissole or maaaybe hamburger. I like the way youve made this so people can avoid red meat if they need and omit the bacon if theyre worried about the cancer risk with processed meat! Thanks Claire! Tip I learned from making too many dumplings, if youx mix your meat in a circular motion, moving only in one direction you can see the protein strands start to stretch, and has wonderful cohesion - it makes it perfect!
